Tonight’s Bonefish & Tarpon Trust 11th annual NYC Dinner and Awards Ceremony, honoring Captain Paul Dixon and Andy Mill .podcast. If you’re in attendance, check that gift bag for a little sweet treat.
Dixon will receive the Lefty Kreh Award for Lifetime Achievement in Conservation, which is the organization’s highest honor, in recognition of his volunteer support of conservation at BTT and several other organizations over more than two decades.
BTT will honor Mill with The Curt Gowdy Memorial Media Award, which is presented annually to those who advance saltwater conservation through writing, entertainment, and media outreach. If you haven’t listened to Andy’s podcast, what are you waiting for?
As recipients of this year’s awards, Dixon and Mill will be enshrined in BTT’s Circle of Honor, housed in the Florida Keys History & Discovery Center in Islamorada, Florida.

Anyone curious about our neighborhood since 2001? Compared to DeFonte's Sandwich Shop, The Waterfront Museum and Sunny's Bar, we're relative newcomers, but we do what we can to fit in. A stop at Kentler International Drawing Space would also honor the history of the neighborhood. Much to see and do. We're leaving out way too much of what Red Hook has to offer, the NYC Ferry boat ride in itself is worth it.

NYPD Transit Officer Rett was on duty today for the festivities and left us a “token of friendship” while his human handler picked up a few and a .You see, his wife (the handler that is) is a native Miamian, and knows where to send hubby for the real deal. Rett just waits patiently before putting his nose where it belongs.

One of the four pallets delivered yesterday, a total of 7200-pounds of golden orbs awaiting the juicer. And look at them! We just love getting key limes in this condition, close to perfection. Know your source of juice!
It’s been rough, making our way through the unfortunate price spikes in just about everything associated with running a business. We have not been spared. However we know how blessed we are to have our loyal and dedicated fans. We’re not sure we could have survived in a different market. Amazing.
So we’ll keep rolling as long as we can. Fresh squeezed key lime juice, a hand made crust from our in-house fresh baked Graham crackers soaked in butter and baked to perfection.

We stumbled across some recent updates from our friends at Save-a-Tree in who have been handing our some of our seeds to help propagate key limes back to the landscape. Would you look at the results! Amazing.
If your planning on a trip, the irony is none of the bakers there can offer seeds to the locals, because seeds don’t come in bottles or drums. Only concentrated “mystery juice” with questionable origin, and that little bit of chemical preservative.
In spite of the 150% increase in the cost of fresh key limes (and just about everything else) we just took three pallets of fresh key limes and were juicing them up. Authenticity matters.
It’ll be heating up soon enough, so stop in for the real deal, while we’re still here. Pies, tarts, Swingles all day long.

It's hard to believe a recipe like this even makes it to the internet these days, everything about it is just so very wrong. Can we excuse it because it's offered to Minnesotans? No. But is this any worse than the plethora of key lime pies —while not green— are still so far off the mark, using the mystery juice of questionable origin, or a crust with scant amounts of butter? Either you're authentic or you're not.
We stand proud of what we do, end even with the soaring costs of every ingredient we're still committed to keeping to what we've always done. If pricing goes up, we'll do everything we can to ease passing those increases on to our customers. What we won't do is look for alternative ingredients. Someone has to do it.
We're truly concerned with where our costs are headed, just how much the market will withstand the higher prices, how much our followers will be able to shell out for a key lime pie. We just ordered a few pallets of key limes, which are more than double what they were last time we ordered, and that doesn't account for the shipping. Wheat milled for our in-house baked Graham crackers has spiked (as of a few days ago) more than 45%, and every ancillary item we purchase (aluminum, packaging, electricity, EVERYTHING) is riding that inflation train.
As you can see from this image, there will always be options. But you can rest assured when it comes to authenticity we're sticking to what has worked for over two decades. The choices are getting slimmer and slimmer every day.

People ask why we don’t include “whipped cream” on our pies. I’d you’re buying a pre-topped key lime pie, chances are this is what sits on top. This ingredient list is from a “typical” store bought KLP (photo taken in Florida no doubt). We sell ours naked and always recommend fresh whipped cream, but even Lazy-whip from a can (as long as it’s made from cream) is a step up from this science experiment.

The Hits Keep Coming!
Headlines from Mexico via informador.mx don’t bode well. Limón (lime in Mexico) prices see an almost 200% increase, as production decreases and demand increases. That’s a big one for us, and just when we thought we made big progress with our new in-house Graham production. One step forward, three steps back. But we trudge on.
We’re doing everything we can to keep from increasing our costs and watching the bottom line, without compromising our pies.
We thought we made progress (we did make progress) with the decision to make our own Graham crumbs: see how pleased Victoria looks? That decision took our commitment to freshness even further, and we like that. But the savings go in one pocket and out the other. One thing we won’t be able to do is grow our own key limes.
If your hankering for key lime pie is on, we have you covered. And we’re doing our limited Wednesday shipping of 10-inch for those outside the immediate area. Help us keep on keeping on, we want to continue as long as we can. ❤️ Thanks for your support.

Small business owners have a saying: I’d rather work 80-hours a week to avoid working 40. Sometimes 80 would be a break 🤡.
We urge everyone to put some effort into showing your support for small businesses with your purchases and patronage. I’d you haven’t be there (as an owner) you probably don’t know the challenges that face small businesses, they and endless and at times seem insurmountable. But the spirit of the small businessperson is what keeps them going. And we could t make it without the conscious effort of the consumers.
Come visit us in Red Hook, or stroll down the strip in your own neighborhood. Yeah, a little more effort, but without the support, we fade away.
We never considered climate change, but we are feeling the pinch. The key lime pie business is a small world, we know all the players referenced in this article and we are certainly feeling the supply-line issues as much as they are. We attribute much of these problems to a post-COVID landscape where work-force and transportation issues were impacted, but regardless of the reason, it is real.
Not to worry, we have you covered for this weeks Thanksgiving pies and for the foreseeable future, and we'll absorb the increases while we work on our fix.

Last year this time, our doors were shuttered and our future was in question.
After a month of shutdown, we reopened with COVID protocols in place, and our wholesale business completely in the tank.
Our little reworked retail shop in Red Hook saw us through, and continues to through today. We attribute this to our loyal customers and the recognition of what we’ve been doing, for 25-plus years. Wow!
We’ll keep on doing what we’ve been doing. Our thanks and gratitude. ❤️

As a young man growing up in Miami, Steve Tarpin started making key lime pies for family and friends using fresh key limes. As Steve is known to have said, "Any self-respecting native South Floridian should know how to make an authentic key lime pie." That philosophy is the backbone of Steve's Authentic, an unwavering commitment to faithfully recreating that timeless classic dessert.
Since 1996, starting in a small studio apartment, Steve began to make key lime pies for a few restaurants, the same way he did back in Miami. We’re intent on seeing key lime trees as part of the landscape again, especially after Hurricane Irma. But you won’t find any key lime pie bakeries in the Florida Keys sharing their seeds, because seeds don’t come in bottles or drums. We do recommend bottled juice, for stripping paint or removing rust, but never, ever in food.
Making a great key lime pie isn’t rocket science. So why is finding an authentic key lime pie such a difficult task?
