I've often warned brides against saving the top tier of their wedding cake for their first anniversary, but not anymore! Last year I decided to run a little experiment with my son's leftover birthday cake. I saved three sections each the size of a traditional top tier, wrapped them tightly in two layers of plastic wrap and one layer of aluminum foil and popped them into the deep freeze. Each quarter we've pulled out a section to test it's taste.
Today we ate a piece that has been in the freezer for 10 months, 1 week and three days and it still tasted great! So go ahead and save your top tier brides; we don't have enough traditions anymore. I think we should keep this one.
