Y'all, the insanity of the end of the school year and spring sports is over! Phew, but before I totally move on, I have to tell you this story.

I made breakfast pizza in a motel room this weekend on a single cast-iron pan, and I am NOT taking questions. 🤣
Volleyball tournament. Three days. One pan. My family ate safely, cheaply, and well the entire weekend. Was it chaotic? Obviously. Do I regret it? Not even a little.
This is just our life and honestly? I wouldn't trade it. 💛

Anyway, back to my favorite thing to do, baking...

Today we remember the ones who gave everything. 🇺🇸

Grateful for them, and for the people we get to share a table with today.

Nobody tells you that when you become the mom who remembers everyone else’s birthday, cake flavor, and favorite meal… yours is the one that sometimes gets forgotten.

Today was chaos. Last day of school before exams. Last volleyball tournament prep. Weeks of not having a full day at home. And yet — I wasn’t about to let my mom’s birthday slip by without something.

So I made her favorite fried rice, pulled out my buttercream, and gave myself exactly two minutes to frost this cake. Vanilla with raspberry compote in the middle, a swirl on top, a little gold coin, and done.

Is it my best decorating work? Absolutely not. But she got her cake. Made with love, made gluten-free, made by someone who just wanted her to feel special — even on the most exhausting day of the year.

That’s kind of the whole point of what I do. Nobody should feel like an afterthought. Not at a birthday. Not at a dinner table. Not because of a dietary restriction.
