SUMMERY FRESH TOMATO SOUP: It's the ideal time to make this creamy, delicate version served with cheesy banquettes.
Ingredients:
-3 tablespoons unsalted butter
-3/4 cup minced sweet onion, such as Vidalia
-1 1/2 pounds tomatoes (peeled, seeded, chopped with juices)
-1 teaspoon tomato paste
-2 cups low-sodium chicken broth
-1 basil sprig
-Salt
-Freshly ground pepper
-12 thin baguette slices, toasted
-1/4 cup plus 2 tablespoons freshly grated Parmigiano Reggiano cheese
In a large saucepan, melt the butter. Add the onion; cook over moderate heat, stirring, until softened, about 5 minutes. Add the tomatoes and their juices, along with tomato paste and cook, stirring, for 5 minutes. Add the broth and basil and season with salt and pepper. Simmer until tomatoes are broken down, about 15 minutes. Discard the basil and puree the soup until smooth.
Preheat broiler. Arrange baguette toasts on a baking sheet. Sprinkle with cheese and broil just until melted, about 30 seconds. Serve the soup with cheese toasts.
MAKE AHEAD The soup can be refrigerated overnight.

LATTICE PIE MUG TOPPERS: They are simple to make – just a bit of cutting and criss-crossing and you'll be quickly on the way to wowing your guests. The baked toppers keep warm drinks toasty while you finish dinner, and they are the perfect treat to have alongside cider.
Make the crusts by rolling out dough for 2 pie crusts. Using a pizza cutter, slice each set of dough into 1/2 or 3/4 inch strips. Arrange one set of pie strips about 1/4 inch apart on some parchment paper, or a silicone baking mat. This will make it easy to slide onto your baking sheet later.
Create a lattice from the pie dough, weaving the strips together. Place a sheet of parchment on top; gently press the dough flat. This will keep the final lattice structure from falling apart. Cut out rounds using a cutter or bowl slightly larger than the mugs you plan on using. If you’re using a cutter, flip it upside down and use the dull edge. This will further secure the lattice. Remove leftover dough from around your cut out circles.
Brush the tops with a little egg white and sprinkle lightly with cinnamon sugar (or use 1/4 cup sugar mixed with 1 teaspoon cinnamon). Bake at 400 degrees for about 10 minutes or until golden brown.
