First afternoon out in a while. Nice 36" fat fish in the First 15 minutes in the Patapsco on the Blue Bandit colored hard bait in 7' of water. Fought me around the boat hard. This was a real heavy healthy fish back here despite the horrible conditions and trash and wood everywhere.

My Chesapeake Mediterranean Pesto Rockfish Steak Recipe: Both broiled and pan seared best Rockfish Steak filets and make the Mediterranean Basil Pesto sauce to begin. The cooking technique is also very important.

Ingredients:

-Old Bay w/blackening seasoning
-Goya all purpose seasoning
-Sea salt
-Basil
-Olive oil
-Spinach
-Lemon
-Garlic
-Garbanzo beans for thickening
-Parmesan and/or ground Feta cheese
-Butter

Blend all of these ingredients in a processor until you have a thick paste-like consistency similar to guacamole.

Marinate your fish steaks for as long as you can and leave in the fridge until ready to cook. Wrap the heavily marinated and seasoned fish in foil which will be used for the first cooking round.

The Hybrid cooking technique starts with baking the foil covered marinated fish for 11 minutes at 380 degrees for a gas oven. Electric may require more time. I like to place on top of a hot ceramic dish for extra heat displacement.

The final cooking will be using a medium high pan seared surface with generous amounts of basil pesto sauce added as the fish sears and caramelizes with the high heat. Since the fish has already been almost fully cooked in the oven, this step is only needed for about 3-4 minutes on each side while continuing to add more Pesto.

Late October Report: All sizes of fish are biting around the Baltimore area. Fish are slowly schooling in day after day trying to find the bait that has posted up in the rivers pretty heavy already. My daughter Leah shows us whats biting right now if you put in the work of jigging and swimbaiting the bay and rivers targeting these fish right now. Shes the best 10 yr old light tackle fisherman i know thats for sure. She bagged these three solid fish in just a couple hours along with a bunch of low 20s I pulled a few decent fish this week to try to keep up with her. These fish are anywhere from the 3-5 ft ledges, to the rock jettys, all the way down to the 50 ft shipping channels. Dont be afraid to leave the fleet of boats all trolling for the same fish and explore the structure and cover the rivers and bay have to offer. This is the time to venture off to find patterns and work them until you have good fish in the boat. Remember that tides and current affect the feeding and location of these fish so always try different spots with different tides. Shallow water dropoffs and river mouths are great places to start. There are fish at your favorite points and bars, you just have to get out from the pack and get on em. This weeks most fun fishing was most certainly the shallow water ledge fishing early in the am.
