I am baking today. These are Raspberry and Blueberry Sweet Breads. Also making Cranberry Almond to take as gifts to the postal workers tomorrow to thank them for what they have done for me with my new biz. Taking some to my GF Sira as well.

Well I forgot who made the pans. Found their stamp (King Arthur Flour), but went online, and it appears they no longer sell these pans. I have 8 of these!!! I keep them packed in their original shipping boxes.

Ok. Back to work!

Took a pound of frozen pumpkin puree out to defrost. Tomorrow I’ll make another crustless pumpkin pie for Pumpkin Pie Ice Cream.

Ok folks…here it is! Pumpkin Pie Ice Cream

The Pumpkin Ice Cream was good. THIS IS BETTER! I used my pumpkin pie recipe and baked a crustless pumpkin pie…THEN, I used it in my ice cream recipe.

Perfect Pumpkin Pie

Ingredients
1 (15 ounce) can pumpkin
1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk
2 large eggs
1 teaspoon ground cinnamon
½ teaspoon ground ginger
½ teaspoon ground nutmeg
½ teaspoon salt
1 (9 inch) unbaked pie crust

Directions
Preheat oven to 425 degrees F. Whisk pumpkin, sweetened condensed milk, eggs, spices and salt in medium bowl until smooth. Pour into crust. Bake 15 minutes.

Reduce oven temperature to 350 degrees F and continue baking 35 to 40 minutes or until knife inserted 1 inch from crust comes out clean. Cool. Garnish as desired. Store leftovers covered in refrigerator.

I baked the pumpkin pie for 45 min and used a class baking dish (couldn’t quickly find my pie pan).

Pumpkin Pie Ice Cream

2 cups crustless pumpkin pie (has all the pumpkin pie seasonings and spices included)
1/2 cup sugar
1 cup whole milk
1 cup heavy whipping cream

Mix it in full and split into 2 pint ice cream containers. Of course I have my Ninja Creami Swirl and spun one of the pints this evening. Split it with hubby man.

I put crush graham crackers in mine. YUM!!! 🤤 😋

P.S. Since I have the Ninja, I can spin it to a soft serve consistency. As long as you mix it well enough, you can freeze it into any container and eat as scoopable ice cream. STILL YUMM-O!!!!

Lastly, I was gifted this coffee maker for Valentine’s Day. Gotta love Hubby Man. IYKYK, I am a COFFEE SNOB! 🤣🤣

Went to Best Buy. They were selling it for $200 which stayed was $50 off their retail price. It came with a stainless steel coffee carafe.

Went over to Walmart. The SAME coffee system was $150 at full price. The difference? It came with a glass carafe like you see in this pic.

Anyone care to guess which one I kept?

It does SO MANY things. Classic coffee, rich (strong) coffee, over ice, and then specialty. I have a milk frother right on the machine. I have a custom measuring spoon. I can use my K-Cups. I can use the ground coffee to make single cups, travel cups, half pots, and full pots. The measuring spoon explains how much ground to put in it.

I am drinking over ice this morning.

For half/full pots, the base plate warms up. There is a shelf that drops for smaller cups.

I can also do hot water (hot or boiling). The water dispenses from a different spout so you don’t get the coffee flavor in it.

Attached a whole bunch of images and a video of the over ice and what it does.

I LOVE my machine. Thank you to Robert Stephen for all the new toys! ❤️❤️

The woman is at it again. Home made beef pot pie cupcakes.

Not really a recipe, but this is what I used and did:

Ingredients
1 lb stewing beef diced small
Beef soup base
Puff pastry sheet
Can cream of celery soup
Can diced potatoes
Can mixed veggies
Egg wash

Directions
1. Dice up the stewing beef and sauté on stove top until done using olive oil and adding beef soup base.

2. While beef is cooking, in a bowl, add the veggies, potatoes, and soup
Note: I am allergic to mushrooms so can’t use cream of mushroom soup.

3. Once the meat is cooked, add into the bowl and fully mix.

4. Place a puff pastry sheet into a 6-cup large muffin pan. Make sure the pastry is pushed into each well.

5. Add a scoop of the meat and veggie mix into each well. Use an egg wash to the top of the puff pastry not used in the muffin pans.

6. Bake at 350 degrees for about 30 minutes or until browned.

This is VERY MUCH a customizable recipe. Use chicken, change the cream of, change the veggies…

Cut and serve. YUM!!! 😋🤤

Guacamole

Ingredients
3 Haas avocados, halved, seeded and peeled
1 lime, juiced (2 tbs per batch)
1/2 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon cayenne
1/2 medium onion, diced
1/2 jalapeno pepper, seeded and minced
2 Roma tomatoes, seeded and diced
1 tablespoon chopped cilantro
1 clove garlic, minced

Directions
1. In a large bowl place the scooped avocado pulp and lime juice, toss to coat.
2. Drain, and reserve the lime juice, after all of the avocados have been coated.
3. Using a potato masher add the salt, cumin, and cayenne and mash.
4. Then, fold in the onions, jalapeno, tomatoes, cilantro, and garlic.
5. Add 1 tablespoon of the reserved lime juice. Let sit at room temperature for 1 hour and then serve.

So for this, I never add the cayenne pepper. I don’t like it too spicy. It’s good with what I use. This time, I used a can of diced tomatoes with chiles. That’s where I got the extra spice. And only used 1/4 diced onion.
