Fried Shark Fillets
2 Boneless Shark Fillets
Equal Amounts of Flour and Plain Bread Crumbs
Buttermilk (enough to cover meat)
Seasoned Salt, Garlic Powder, Paprika (determine amount to your liking)
Cooking Oil

Using a meat mallet beat each fillet to tenderize it then cut in half. Lay each piece in the buttermilk. In a separate plate mix flour, bread crumbs and seasoning. Heat oil until hot but not smoking. Let excess buttermilk drain off each piece and coat it with the flour mixture. Fry until golden brown and drain. Yum Yum

Baked Loaded Potato Wedges
Ingredients :
4 - 5 potatoes
1 pk. Bacon
3 - 4 stems green onions
Bag of shredded cheddar cheese
Butter
Salt/Pepper
Wash and cut your potatoes into wedges. Leave skin on. Place on a microwave safe plate or bowl and cook until the potatoes start to get soft. Place potatoes in a baking dish. Chip up raw bacon and place on top of the potatoes. Salt/Pepper. Place pats of butter on top of everything. Cook at 425 until your bacon is crisp and potatoes are done. Place chipped onions (stalk and bulb) on top of potatoes then cover with the cheese and bake until the cheese is good and melted. These are so good and simple.

Most all of us southerners love red velvet cake. Well here's a different take on that delicious cake.
Ingredients:
1 Box red velvet cake (cook as instructions on box into a sheet cake but add to your likens chopped fine pecans into mix before baking)
1 - 2 blocks cream cheese (room temperature)
1 pack white chocolate almond bark
Cook cake mix with added pecans. Let the cake cool completely. In a large bowl, crumble the cake real good. Add cream cheese and mix thoroughly. Roll into about an inch balls and place on a cookie sheet and refrigerate until chilled. Melt your almond bark (microwave or double boiler). Dip each ball into chocolate and place on wax paper until firm. Oh my my these are delicious.

Good foggy morning. Here's a recipe I conjured up last night and to say the least we enjoyed it. You can use up your leftover ham from the holidays.
Skillet Cordon Bleu Hillbilly Style
Ingredients :
4 boneless skinless chicken breast (cut into small pieces)
Ham (cut into small cubes)
1 Can each cream of mushroom and cream of chicken
1/2 block Swiss cheese (grated)
1 Bag shredded mozzarella cheese
1 Can sliced mushrooms
1 Bag flat noodles (cooked)
Cook your chicken with a tiny bit of cooking oil until almost done and add your ham. Continue cooking on medium to finish cooking the chicken and heating up the ham. When done, add your mushroom just long enough to heat. Drain your noodles and add the 2 cans of soup to the noodles. Mix real good and add your meat mixture to the pot of noodles. Add your cheese to the mixture and cook on med to medium low to reheat everything and melt the cheese. Salt and pepper to taste. It's done !! Fix some good garlic toast and enjoy πŸ˜‹πŸ˜‹

Earthquake Cake
Ingredients :
1 German Chocolate Cake Mix or
1 Devils Food Cake Mix
(You'll need the ingredients to prepare cake mix)
1 Small Bag Sweetened Coconut Flakes
1 1/2 Cups Chopped Pecans
1 Stick Butter or Margarine (softened to room temperature)
1 8oz. Cream Cheese (softened to room temperature)
2 Cups Confectioners Sugar
Preheat oven to 350 degrees. Spray a 13x9 baking dish well with baking spray (pam).
Sprinkle coconut flakes in dish first then sprinkle 1 Cup chopped pecans on top of coconut. Prepare cake mix as directed on the box. Pour cake batter on top of coconut and pecans. Beat cream cheese and butter until creamy. Gradually add confectioners sugar beating until smooth. Place dollops of this mixture on top of cake batter. Use your spatula (spoon) and swirl cake batter and cream cheese mixture. Sprinkle remaining pecans on top and bake for 1 hour.

What's for supper Grandpa ? Well, fried shrimp, boiled shrimp, fried oysters, corn, wieners, potatoes, hushpuppies, garlic bread and to top it all off, homemade bread pudding with a pot of hot coffee. That's what's for supper.
I'll post the recipe for the bread pudding. Stay tuned for some great recipes.

Chicken Fried Steak And Gravy
4 (1/2 pound) beef cube steaks
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon black pepper
3/4 teaspoon salt
1 1/2 cups buttermilk
1 egg
1 tablespoon hot pepper sauce
2 cloves garlic, minced
3 cups vegetable shortening for deep frying

GRAVY
1/4 cup all-purpose flour
4 cups milk
1 teaspoon salt
1/2 teaspoon pepper

Pound the steaks to about 1/4-inch thickness. Place 2 cups of flour in a shallow bowl. Stir together the baking powder, baking soda, pepper, and salt in a separate shallow bowl; stir in the buttermilk, egg, hot Sauce, and garlic. Dredge each steak first in the flour, then in the batter, and again in the flour. Pat the flour onto the surface of each steak so they are completely coated with dry flour. Heat the shortening in a deep cast-iron skillet to 325 degrees F. Fry the steaks until evenly golden brown, 3 to 5 minutes per side. Place fried steaks on a plate with paper towels to drain. Drainhe fat from the skillet, reserving 1/4 cup of the liquid and as much of the solid remnants as possible.
Return the skillet to medium-low heat with the reserved oil. Whisk the remaining flour into the oil. Scrape the bottom of the pan with a spatula to release solids into the gravy. Stir in the milk, raise the heat to medium, and bring the gravy to a simmer, cook until thick, 6 to 7 minutes. Season with salt and pepper. Spoon the gravy over the steaks to serve.

Cheesecake Crescent Rolls~

2 cans of Pillsbury Crescent rolls
2 8oz packages cream cheese, softened
1 1/2 tsp vanilla
1/4 cup butter, melted
Cinnamon
1 cup Sugar

Unroll and spread 1 of the cans of crescent rolls on the bottom of a 9 x 13 baking dish (or 8 x 8 if you want to cut the recipe in half). Combine softened cream cheese, 1 cup sugar, and vanilla. Spread over crescent roll layer. Unroll and layer remaining crescent rolls over cream cheese layer. Melt your butter and spread over top of crescent rolls. Sprinkle generously with cinnamon and sugar. Bake for 20-30 minutes in 350F oven until bubbly and slightly browned. Drizzle with a little honey if you like. Let cool a bit, slice and eat.

This recipe was requested today and one of my favorite cakes.
Cream Cheese Pound Cake
Ingredients :
8 oz. Cream Cheese (room temperature)
3 Sticks Butter (margarine) (room temperature)
3 Cups Self Rising Flour
3 Cups Sugar
6 Eggs (room temperature)
1/4 Cup Milk (room temperature)
1 Tablespoon Vanilla Flavoring

Cream sugar and butter until creamy. Add cream cheese and beat until smooth. Add eggs one at a time beating well between each and add a little flour between each egg beating until smooth. Add milk and flavoring and beat until mixture is creamy.
Grease and flour a bundt pan. Pour mixture into pan and put into a cold oven. Cook at 325 for approximately 2 hours or until top is golden and toothpick comes out clean. Cool 10 minutes then turn out onto cake plate.

Busy with life in general but want a delicious yet easy meal ? Try this for both.
Vegetable Beef Stew
Adjust the size of ingredients to the size pot of stew you need. We like leftovers plus I freeze some for later meals.
2 lbs. Stew Beef
1 Bag Frozen Butter Beans (they're called baby Lima beans at the grocery store)
1 Bag Frozen Peas (I use fresh peas from garden that I freeze)
1 LG. Can Whole Kernel Corn (drained)
2 LG. Cans Crushed or Diced Tomatoes
1 Can Sliced Carrots
6-7 Potatoes (peeled and cut into small pieces)
1 Bag Frozen Sliced Okra
1 Onion (cut into small pieces)
1 LG. Can Tomato Sauce
In a LG. boiler place your stew beef and water and boil the stew out of it (no pun intended) until tender and falling apart. Add all your vegetables and additional water to keep everything covered and salt and pepper to taste. Bring to a boil then turn down to med/med high and cook till all the vegetables are done.

Do you like sweet potatoes but get tired of the same old pies and casseroles ? Give this a try for a little change.
Ingredients :
1 Stick Butter
1 Cup Milk
1 Cup Self Rising Flour
1 Cup Sugar
1 LG. Can Yams
Cinnamon
Brown Sugar
Preheat oven to 350. Melt butter and pour in bottom of casserole dish. Drain yams but reserve at least 1/2 of the juice. Separate yams into small pieces and put in dish with the butter and pour the reserved juice over the yams. Sprinkle to your taste, some cinnamon and brown sugar over the yams. Mix until smooth the milk, sugar and flour. Get all the lumps mixed in. Pour over the yams. Bake for 35-40 minutes or until your crust is a golden brown.

Let's get the kids involved in cooking some cookies. This recipe is a great start to get them involved. Yummy Peanut Butter Cookies.
Ingredients :
1/4 Cup Vegetable Oil
1/4 Cup Margarine (softened)
1/2 Cup Sugar
1/2 Cup Brown Sugar
1 Egg
1/2 Cup Peanut Butter
1 Teaspoon Vanilla Flavoring
1 1/2 Cups Flour
Preheat oven to 300-325.
Grease a cookie sheet.
Mix All ingredients together until smooth. Roll into small balls and place on greased cookie sheet. Mash the balls slightly with a fork leaving an indention. Bake for 10-12 minutes. I usually double the recipe.
Give the kids a glass of milk and some cookies and they'll be some happy campers.

Good Saturday morning ! Let's cook up some comfort food today. Homemade Chicken Pot Pie πŸ˜‹
Ingredients:
1 Cut up Chicken (or pieces about equal to)
4 Potatoes (peeled and sliced thin)
1 Small Can Sweet Peas (drained)
1 Small Can Sliced Carrots (drained)
1 Can Cream of Chicken Soup
2 Cups of Chicken Broth (reserved from cooked chicken)
1/2 Small Onion (sliced thin or finely diced)
1 Stick of Margarine (softened)
1 Cup Self Rising Flour
1 Cup Milk
Preheat oven at 325-350
Boil Chicken until tender. Remove from the bone and reserve 2 Cups of broth. Layer in a greased baking dish : chicken, potatoes, peas, carrots, soup, broth and onion. Continue layering until all these ingredients are used. Melt margarine. Add the flour and milk to melted margarine and whisk until smooth. Pour this over layered ingredients. Cook for 1 hour or until potatoes are tender and top crust is a pretty light brown.

Peach Cobbler Pound Cake
Ingredients :
3 Cups All Purpose Flour
1/2 Teaspoon Salt
3 Teaspoons Baking Powder
3 Cups Sugar
3 Sticks Butter (margarine) Softened
2 Tablespoons Vanilla Extract
6 Eggs
3/4 Cup Milk
1 LG. Can Sliced Peaches (drained)
Ground Cinnamon
Brown Sugar
Confectioners Sugar
Milk
Set all ingredients out to get room temperature.
Grease and flour Bundt pan.
Cover bottom of pan with peaches (you won't use the whole can here). Sprinkle cinnamon and brown sugar on top of peaches (to your taste)
Cream sugar and butter till creamy. Add 1 egg at the time and beat each well. Gradually add flour, salt, baking powder and milk. Beat till combined well. Squish remaining peaches and add to batter Beat until well mixed. Add vanilla and beat some more. Pour into your pan and bake at 340 for 1 HR and 15 minutes then turn oven down to 325 and bake for 15 minutes more. Ck with a toothpick to make sure it's done. Cool for 10 minutes then turn out onto serving plate. Peaches will be on top.
When cooled, mix about 1/2 Cup confectioners sugar with a little milk until consistency you like. Little milk goes a long way. Pour over top.

Need a quick and easy dessert ? Here it is.
Granny's Fruit Pies
1 Large can sliced Peaches (drained and cut into small pieces)
1 Medium can Crushed Pineapple (drained)
1 Cup Coconut
1 Can Condensed Milk
1/3 Cup Lemon Juice
1 Large Cool Whip
2 or 3 Graham Cracker Crust
Mix all the ingredients well except cool whip. Fold in the cool whip with other ingredients and pour into the crust. According to how thick you want the pie whether it takes 2 or 3. Refrigerate until ready to serve.

Mississippi Mud Cake
Cake ingredients :
2 Sticks Butter (margarine)
1/2 Cup Cocoa
2 Cups Sugar
4 Eggs (beat well)
1 1/2 Cups Flour
Pinch of Salt
1 Teaspoon Vanilla Flavoring
1 Cup Pecans (finely chopped)
Topping Ingredients :
1/2 stick Butter (margarine) softened
1/3 Cup Cocoa
1 Box Confectioners Sugar
1/2 Cup Milk
2 Cups Miniature Marshmallows

Melt butter and cocoa over low heat. Add eggs and sugar and mix well. Stir in flour, salt, vanilla flavoring and pecans. Pour into a 13x9 greased pan and bake in a preheated 325 degree oven for 35 minutes.

While cake is baking mix ingredients for topping with the exception of the marshmallows. Immediately upon removing the cake from the oven cover it with the marshmallows, then pour topping mix over the marshmallows.

Remember when Granny would slave over Sweet Lime Pickles for days on end ? Boy do I have a simple recipe that is as close to those pickles as can be and super dooper easy !! Did I mention delicious πŸ˜‹ You'll be surprised how it's done.

Easy Sweet Pickles

1 Gallon Whole Dill Pickles (store bought and yes I said Dill)
1/2 Cup White Vinegar
1/2 Cup Pickle Juice from the Jar
3 Cups Sugar
1 - 1 1/2 Tablespoons Pickling Spice

Drain the pickle juice from the jar reserving 1/2 Cup. Place the pickles into a lg. bowl and slice into 1/4" slices. Set aside.
Into the jar pour 1/2 Cup Pickle juice, 1/2 Cup White Vinegar, 3 Cups Sugar and Pickling Spice.
Put the lid on jar and shake. I do mean shake. The Sugar will not dissolve completely and that's ok.
Put your slices back into the jar.
Put the lid back on and give it a good shake again. Leave on your counter for 3 days shaking it often. The Sugar will dissolve gradually as you continue to shake.
After 3 days you can store them in the refrigerator or you can can them for longer shelf life.

These, surprisingly, will be like the old timely sweet pickles. They are delicious !!!

There's nothing like the smell of fresh Banana Bread. This recipe is super easy, moist and delicious.

Easy Peasy Banana Nut Bread

2 cups Self Rising Flour
4 Over ripe Bananas
1 Cup Sugar
3/4 Cup (1 1/2 sticks butter or margarine) Melted and Cooked
2 Eggs
1 teaspoon Vanilla Flavoring
1/2 Cup Pecans or Walnuts (chopped fine)

Preheat your oven to 350 degrees. Grease your loaf pan.
Peel and mash the bananas leaving them with a little texture. Beat the bananas and eggs for 3 minutes. You want this to be light and fluffy.
Add the melted and cooled butter (margarine) and vanilla. Scrape the sides of the bowl often.
Fold in the flour and nuts.
Pour mixture into the greased loaf pan and bake for 1 hour and 15 minutes or until light brown and when you insert a toothpick into center it comes out clean. Let cool for 10 minutes before removing from the pan. Enjoy πŸ˜‹

I fixed this last night and it was so good.
Pan Fried Sweet Potatoes
5-6 medium sweet potatoes
1/2 stick butter or margarine (softened)
1/2 - 3/4 c. Brown sugar (to your taste)
Dash of salt
Wash and peel sweet potatoes. Cut sweet potatoes into 1/4" rounds. Put them in a large frying pan with butter , brown sugar and dash of salt. Stir making sure to coat the sweet potatoes well. Put lid on the frying pan and cook on medium low stirring often until sweet potatoes are tender and cooked to a candied state.
