Just another early Friday morning. ❤️ The reason I stop taking orders each Wednesday at noon is so I can get the right amount of my starter (Ruth) built up to be nice and strong to mix late Wednesday evening or very early on Thursday.

Sourdough takes time....the dough gets mixed then bulk ferments at room temperature from anywhere from 5 to 12 hours (lots of factors at play that determine that). The dough is then shaped and put into refrigeration for 12-16 hours to build that nice flavor and color once baked.

Early Friday morning, usually around 4AM, everything heads to the oven, allowing proper time to cool and then packaged just in time for your pickups.

There are other steps prepared even on Monday and Tuesday. So, in all reality, it's a 5 day process....but so worth it.
