Chocolate Lava Cakes for 2

Ingredients
- 4 tbsp unsalted butter
- 2 oz dark chocolate
- ¼ cup granulated sugar
- 1 large egg
- 1 tsp vanilla bean paste or extract
- 2 tbsp all purpose flour
- Pinch of salt

Instructions
1. Preheat oven to 425°F. Grease two ramekins.
2. Melt butter and chocolate together.
3. Whisk in sugar, egg, and vanilla.
4. Fold in flour and salt.
5. Bake 8 – 10 minutes until edges are set.

Baker’s Tip:
Serve warm with powdered sugar or ice cream.

Valentine’s Day is around the corner! How about something sweet? 👀❤️

Ingredients
2 ¾ cups all purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1 cup unsalted butter, softened
1 ½ cups sugar
1 large egg, room temperature
1 large egg yolk, room temperature
2 tsp pure vanilla extract
1 tsp almond extract
¼ cup sour cream or plain yogurt
Optional: Colored sugar or sprinkles for decorating

Instructions

1. Preheat your oven to 350°F. Line baking sheets with parchment paper or silicone baking mats if not using nonstick.
2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
3. In a large mixing bowl, use a hand or stand mixer to cream the softened butter and sugar on medium speed until light and fluffy (2-3 minutes).
4. Beat in the egg, egg yolk, vanilla extract, and almond extract until fully combined. Mix in the sour cream or yogurt until smooth.
5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not over-mix.
6. Cover the dough with plastic wrap and chill in the refrigerator for at least 30 minutes (up to 24 hours). This prevents spreading.
7. Scoop 2-tablespoon-sized portions of dough and roll them into balls. Place on prepared baking sheets, spacing them about 2 inches apart. 8. Flatten slightly with your palm or the bottom of a glass. Decorate with colored sugar or sprinkles, if desired.
9. Bake for 10-12 minutes, or until the edges are just set and the centers look slightly underbaked.
10. Let the cookies cool on the baking sheet for 5 minutes before transferring to cool completely.

About Us

Sweets by Shanice is owned and operated by Shanice Lowe. Read the story below to find out how Shanice took her gift, which was passed down from her grandmother, and birthed it into Sweets by Shanice.

My sweet tooth came early in life. As a young child I was always in the kitchen with my grandmother whenever she baked. She was an amazing cook and baker. Everything I learned started with her teaching me simple recipes like buttermilk pound cake and pecan pie. From her gift that she passed down, I ventured out and started experimenting with my own recipes and branching out to create sweet treats such as candy apples, chocolate covered Oreos and cake pops.

I started out making cakes for church and family events but my desire to grow and learn was what inspired me to create Sweets by Shanice and specialize in homemade cakes, cupcakes and treats.

As business started to pick up, I wanted to branch out and bake more for events such as anniversaries, corporate events, weddings, baby showers, bridal showers, etc. I prayed and began to work on my craft by taking classes and learning how to be creative with fondant work and edible images. I began advertising my business to local shops and business owners in the area and was able to land my first corporate event, which led to another event and another.
