This is the bread from the book of Maurizio Leo. I am so grateful to have such a perfect guide. Every bread from the book is a masterpiece.
This one is a sourdough bread with sunflower and sesame seeds.
The only changes I have made is the levain. For the starter I took this proportions:
White flour( organic) 28g
Whole wheat flour 28g
Water 56g
Sourdough starter 100% hydration : 15g rye
15g white flour.
Fermentation from morning to 6pm at the temperature 82F.

I did not soak or roasted seeds. Added them raw. And I forgot about folds for 1 hour. Therefore, 1 hour the dough rested, then I added seeds and the remaining water around 35 g,and performed stretch and fold until everything nicely incorporated. Then, I performed folds 2 times with 30 min apart. Instead of resting after the last one,I had just divided/ shaped / set in the fridge for 20 hours.
I did not expect to have good results since I have abused the process. But voila, the texture, taste and shape is gorgeous. # sourdough # homemade # baking # usa # experiments
