🎃Chai-Spiced Pumpkin Snickerdoodles🎃

Ingredients
For these autumn-inspired cookies, you’ll need:
• 1/2 cup coconut oil or non-dairy butter, softened
• 3/4 cup coconut sugar (or substitute with 1/4 cup white sugar and 1/2 cup brown sugar)
• 1/4 cup pumpkin puree (or mashed sweet potato for a unique twist)
• 1 teaspoon pure vanilla extract
• 1 1/2 cups gluten-free all-purpose flour + extra for rolling
• 1 teaspoon chai spice
• 1 teaspoon cream of tartar
• 1/2 teaspoon baking soda
Cinnamon Sugar Coating
• 2 tablespoons organic cane sugar
• 1 teaspoon chai spice

How to Bake These Autumn Gems
1. Prep the Oven and Baking Sheet: Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper or a silicone mat.
2. Mix the Wet Ingredients: In a large mixing bowl, beat together coconut oil (or butter) and sugar until smooth. Add the pumpkin puree and vanilla, mixing until fully combined.
3. Combine the Dry Ingredients: In another bowl, whisk together flour, chai spice, cream of tartar, and baking soda. Slowly add the dry ingredients to the pumpkin mixture and stir until you get a soft dough.
4. Make the Cinnamon Sugar Coating: In a small bowl, mix cane sugar with chai spice.
5. Roll the Dough: Form the dough into tablespoon-sized balls, then roll them in the cinnamon sugar mixture to coat.
6. Bake to Perfection: Place the cookie balls on the baking sheet, spacing them a few inches apart. Gently flatten each ball to help it spread, then bake for 8-10 minutes. Allow them to cool on the tray, as this will help them firm up and keep that chewy texture.

• Chill the Dough for Coconut Oil: If using coconut oil, chill the dough for 15 minutes before baking to prevent the cookies from spreading too much.

S’mores Bars

Ingredients:
- 1 cup graham cracker crumbs
- ½ cup melted butter (or coconut oil)
- 1 cup chocolate chips (semi-sweet or milk chocolate)
- 2 cups mini marshmallows (or regular marshmallows, cut in half)
- ¼ cup sugar (optional)
Instructions:
1. Prepare the Crust:
-
- In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar (if using). Mix until the crumbs are evenly coated.
- Press the mixture firmly into the bottom of a square or rectangular dish (about 8x8 inches) to form the crust.
2. Melt the Chocolate:
- If you have a campfire or a portable heat source, you can melt the chocolate chips in a heatproof bowl over a pot of hot water. Alternatively, if you have no heat source, just use the chocolate chips as they are for a layered effect.
3. Layer the Ingredients:
- Pour the melted chocolate over the graham cracker crust, spreading it evenly.
- Sprinkle mini marshmallows on top of the chocolate layer.
- Press down gently to ensure they adhere.
6. Toast the Marshmallows:
- If you have a campfire, place the dish (using a heatproof dish or pan) over the fire or on a grill for a few minutes until the marshmallows are golden brown.
Keep a close eye to prevent burning.
- If you don't have a fire, you can skip this step, and the bars will still be delicious!
7. Let It Set:
- Allow the bars to cool and set at room temperature for at least 30 minutes. If possible, place them in a cool area to help them firm up.
8. Slice and Enjoy:
- Once set, cut into squares or bars and enjoy your no-bake campfire s'mores bars! These can be stored at room temperature for several days.
Tips:

No-Bake Chocolate Peanut Butter Pie

Ingredients:

For the Crust:
- 1 ½ cups crushed graham crackers (or any dry cookies you have)
- ½ cup coconut oil
- ¼ cup sugar (optional)

For the Filling:
- 1 cup peanut butter(any nut butter of your choice)
- 1 cup powdered sugar (or granulated sugar, if you don’t have powdered)
- ½ cup cocoa powder
- 1 tsp vanilla extract (optional)
- ½ cup milk (I used a protein shake I had on hand-they don’t need refrigeration!)

For Topping:
- Optional: peanut butter, crushed nuts, chocolate chips, or any dried fruit you have on hand

Instructions:

1. Prepare the Crust:
- In a mixing bowl, combine the crushed graham crackers, melted butter, and sugar (if using). Mix until the crumbs are evenly coated.
- Press the mixture firmly into the bottom and up the sides of a pie dish. Use the back of a measuring cup or your fingers to create an even layer.
- Set aside while you prepare the filling.

2. Make the Filling:
- In a large bowl, mix the peanut butter, powdered sugar, cocoa powder, and vanilla extract (if using).
- Gradually add the milk, stirring until the mixture is smooth and creamy. You can adjust the milk quantity to achieve your desired consistency.

3. Assemble the Pie:
- Pour the filling into the prepared crust, spreading it evenly with a spatula.
- If you want, drizzle your nut butter, sprinkle crushed nuts, chocolate chips, or dried fruit on top for added texture and flavor.

4. Set the Pie:

No-Bake Chocolate Oatmeal Cookies (Power-Outage Friendly)

Ingredients:
- 1 cup peanut butter (or any nut/seed butter)
- 1 cup honey or maple syrup
- 3 cups rolled oats
- ½ cup cocoa powder
- 1 tsp vanilla extract (optional)
- A pinch of salt

Instructions:
1. Mix the Wet Ingredients:
- In a large bowl, combine the peanut butter and honey (or maple syrup). Stir until smooth and well blended. If you have vanilla extract, add it here.
2. Add Cocoa Powder:
- Sift in the cocoa powder to avoid lumps and mix thoroughly until the mixture is smooth and creamy.
3. Incorporate the Oats:
- Gradually add the rolled oats to the mixture. Stir well until all the oats are evenly coated with the chocolate mixture.
4. Shape the Cookies:
