Recipe for Zwetschgendatschi mit Streusel.
Zwetschgendatschi mit Streuseln
Fuer 4 Personen
Hefeteig (Yeast dough):
125ml Milch (Milk)
20g Hefe ( Yeast)
300g Mehl (flour)
50g Zucker (Sugar)
1 tablespoon Almond Likoer
1 Tablespoon of the inside a vanilla bean
2 Eigelbe (Eggyoks)
1 prise Salt ( pinch of Salt)
1 messerspitze Salz (knifepoint salt)
1 messerspitzte Zitronenschale ( knifepoint Lemonpeal)
50g weiche Butter (soft Butter)
Buuter und Mehl fuers Blech zum ausrollen
Warm the Milk to 20grad = 86 degrees add the yeast and let it dissolve. Pour flour in a bowl and add the yeast mixture to it and mix everything, Sugar, Eggsyolks, Salt, Vanillamark, Lemonpeal and Almond likoer together and knead the dough real good, then add the Butter and knead the dough again until a nice and smoth. Cover it up in a bowl and put it in a warm place for about ½ hour to let it raise.
Spread the melted butter and then cover it with flour. Roll the dough on a flour surface and put it on your cookiesheet.
While the dough is rising, wash Plums, cut them in half, remove the stone. Cut the plum pieces,
But only about half way. Arrange them very close on your dough and sprinkle with sugar and Cinnamon your plums.
Streusel:
Flour, coarse sugar, melted Butter, Salt, Sugar and Vanilla bean mix it with your habd until you get streusel, then mix the Almond slivers under the streusel. With your hands put them over your plums.
Then let the cake still sit for about 1/1 hour. Preheat the oven to 350. Bake the cake about 30 to 40 minutes until golden brown. Remove from oven and let it cool down. When still warm, cut it in to pieces.
