Thanks again Bev The baked ham dinner is now Ham and Vegetable Soup with 🥵Simmered the leftover ham, the bones and fat in vegetable broth for a few hours, pulled out the bone and cartilage, shredded and chopped the meat, threw in celery/corn/tomatoes/potatoes/onion/green beans and black pepper/oregano /thyme/bay leaves/hot crushed red pepper and a little salt. Man, nothing like homemade soup with damp cold weather.

Trader Joe’s has so many house brand goodies in their stores. Just discovered a new one. TJ’s Apple Blossoms from the Niagara Fruit Belt of Canada. Cheap at 2 to a pack. I remember $3.49 but for sure under $4.00. Ready in 15-25 minutes from frozen and taste homemade. Glad I just bought a new freezer... 🇨🇦

_ _ _ _ _ New Year from DAE. Not sure what it’s going to bring but we’ll all make the best of it as much as we can. Made the traditional Southern Black Eyed Peas for Good Luck. 🤞 Smoky bacon, onion, celery, garlic, jalapeño, black pepper. Cheated and used canned peas. Liquid in the bean cans looked lame so I drained and rinsed the peas, made a liquid from Better than Bullion Chicken Paste and thickened with flour/BTB water. DELICIOUS. New Years promise: NOT missing shad season this year!

***first time in the 2-4 years we’ve had them that they’ve all overcome fear of the fireplace and are Norman Rockwelling in front of it. We consider that a Christmas present!

Braised Short Ribs with steamed Brussels Sprouts and Robuchon Mashed Potatoes with pan gravy. 3 hours from start to finish. After I strain the liquid from cooking to make the gravy I keep the onions to add to the gravy as it comes together. Adds a nice touch of flavor.

Been a long 3-1/2 days at the DAEats complex. Was moving wood out of my basement through the window and making a racket. We thought P*eWee, who was with us, had run upstairs since we didn’t see him anymore. Noticed a couple hours after we finished that P*e was nowhere to be found. Searched every nook and cranny, ceiling crawl spaces etc. Zilch. I came to the conclusion that he had made a 52” vertical leap out the window in a panic. Which was impossible and he’s deathly afraid of the outdoors. But.....where was he. Well he turned up hiding under the base of a woodturnig lathe next to the window, in a space that looks physically impossible for him to squeeze in to, blocked in by a wall and wood but with an opening he could get out of. According to the vet traumatized kitties will go in to lockdown mode for several days and not budge even when their own humans are calling them. Hunger finally got the best of him and we heard him meowing this morning. I’ve had about 6-8 hours of sleep the last three nights devastated and beating myself up over this. Sleeping good tonight. P*eWee has some PTSD according to the vet but left alone he’ll be his old self soon. I need NOTHING for Christmas this year.

Finally. Coldish weather worthy of belly warming cooking. Chili Stoup with a purpose now. No actual hot chilies in it (I’m told the “mild”Hatch chiles from this year are 🥵). Chili powder to season the beef and my go to addition to everything but ice cream, Chile flakes. Controlled “chaos” 👌Happy Days!

Well, a cold weather meal on warm November evening. Wharfs y’a gonna do. My gears have shifted even if the weather hasn’t. Pot Roast in a Le Creuset domed braizer. Does a pot roast in about an hour and a half. Garlic mashed potatoes with a healthy ratio of 2 pounds of spuds to a half pound of butter and 1/4 cup of cream. Through something green on the plate to make it look a little healthier.

Two 4-5 lb Bell & Evans chickens bought on sale for $1.99 a pound. Roasted in the oven using a true convection oven(don’t buy a convection oven with only 2 fans. It ain’t real convection, you need three fans). Raising chickens or turkeys above the top of the roasting pan with convection gives you crispy skin about a quarter of the way in on the bottom on each side. The rest of the bottom skin gets slightly crisp and ready to be thrown in a pan and finished off. So you get 100% skin to devour. All the meat got picked, vacuum sealed and frozen except for a few handfuls for P*eWee. The carcass is going in to the pot tomorrow for stock.
