If you love authentic Danish rye bread, this is the recipe for you!👇🏻 Save for later. It’s seriously SO good.

Danish Rye Bread with Sourdough

Step 1:
Mix the following ingredients in a mixer at low speed for about 2 minutes. Let it rest covered for 10-12 hours at room temp. Make sure all ingredients are soaked with water.

750g water (85% hydration total)
50g sunflower seeds
50g rye berries
60g pumpkin seeds
60g flaxseeds
20g salt
15g honey

Step 2:
409g whole grain rye flour
170g whole grain wheat flour
80g bread flour
100g levain (100% hydration. Refreshed)
10g dark malt flour

Mix in the levain and the flour for about 10 minutes at low speed. Let it rest covered at room temp for about 8 hours. Mix at low speed for 2 minutes. Pour the dough into a 3.3L bread tin. If you don’t have an “easy slip” you should oil it. Let it rest covered for about 1.5h. Sprinkle a little water on top and perforate the surface 15-20 times with a fork. Sprinkle with seeds. Bake for 2 hours at 350F. Turn it out of the tin onto a rack and let it cool for 1 hour. Wrap it in a tea towel. Wait 12-24 hours before slicing.

SOUND ON 🔊 FOR CROISSANT SOURDOUGH CRUNCH

So ridiculously yummy!

CROISSANT SOURDOUGH 🥐
225g all purpose flour
225g bread flour
50g whole wheat flour
360ml water (72%) 💦
100g levain 🫧
20g salt 🧂
100g grated butter 🧈

I added the butter during stretch and folds.

So soft and buttery, yet so flaky! I’ll be thinking and dreaming about this for days 🤩

I think Lotus (that would be my sourdough starter) was pretty happy that I fiiiinally fed her 🪷🤭 And it looks like she doesn’t mind the Greenlandic tap water at all! 🥳 She’s quite the international girl (having lived in China, South Korea, the US, Iceland, and now Greenland) 😅 Swipe to see the crumb shot!

Ooooh, sourdough. I never get tired of your beautiful face ♥️ Who’s with me? 🙌

78% 💦
25% pizza flour
25% whole wheat
For one of the loaves I added black sesame seeds, sunflower seeds, pumpkin seeds, and pecan pieces during lamination.

Delish, especially with a shameless amount of butter.
