It’s funny how items in our repertoire get forgotten about and then is remembered. When a tea party style shower comes our way, these Thyme Swiss Cheese Puffs (Gougeres) stuffed with our Signature chicken salad was invited to the party.
It has been a LONG while since we made these. So long in fact, Brenda had no idea what I was doing or what these were. I’m glad we are heading into spring with these perfect bite sized Sammie’s.

Megan was my college roommate and a bff when phones still plugged into walls. If you follow the recipe blog you may remember her from when we did Butternut Squash Soup: Pork Belly with Kelly & Vegan with Megan. She is actually the one who pushed me to really research and develop gluten free and vegan recipes when I started my catering business. Now we are swimming in a variety of options for our clients. I met Mara when I worked a job for a local cafe in between teaching and finding myself. Immediately, I fell in love with this old soul. Grounded doesn’t even come close in describing Mara. She embodies calm and strength and exudes hard work. When it came down to bringing people on to work events, I was beyond thrilled when Mara agreed. Between both of these gals, I am more than relaxed when either of them are on site. Mara won’t be on site for some time. She is expecting a tiny package soon and we all are excited for her.
