Does cold proofing matter?

To me it does a ton! Cold proofing makes scoring so much easier and really helps the dough hold its shape. Here you can see a batch I did side by side. Are they both going to be delicious…of course. Is one going to be a little more sour and fluffier….absolutely!

One mistake I see people make often is thinking they need more water way too quick! Just keep on working in that flour and it will hydrate! Don’t end up with a sloppy mess by adding more water.
