Fresh out of the oven, this burnt cheesecake had the perfect rustic charm, with its deep golden crust and creamy, melt-in-your-mouth centre. The scent alone was enough to make waiting unbearable, but patience is key with a good Basque cheesecake. Letting it cool just enough to set while still keeping that luscious, custardy texture was pure torture, but worth every second.

One slice in, and it was pure indulgence. No fancy toppings and no unnecessary frills, just good old-fashioned, rich, cheesy goodness. Paired with a strong cup of coffee, this was the kind of simple pleasure that made a mid-afternoon break feel like a luxury.
