What do you think of the ? Second try, different recipe.
It’s interesting how the Dutch processed cocoa had the effect of giving the canelé an even better rise than the ones without.

Fresh from today’s bake. Only managed to make enough for 2 orders and have a little excess for home consumption (one croissant and some trimmings).

I won’t be baking any Chinese New Year goodies this year but I will still be baking these yummies and have plans to make some mandarin orange curd for danishes!

Bought some new tins and I must say that I’m loving how the kouign amann have turned out!

Just not every week though. Still figuring out how to juggle being a mum and teaching at a few locations plus managing sourdough viennoiserie and bread orders after 19.5 months. 😬

It’s been awhile since I last posted anything. Baking for orders still happens almost once every fortnight. Over the recent sourdough croissant bakes, I’ve tuned in more with the sweet stiff starter I’ve been using and the results have been so much more consistent.

Today I accidentally left the air conditioning turned off while I was out at work for a few hours! Fortunately, the temperature of the proofing viennoiserie was no more than 25.7 degrees celcius, just a little longer and the butter would have definitely all melted 😢.

Managing baking sourdough breads and pastries while being mum to a soon to be 19 month old toddler and juggling teaching at a few places isn’t a walk in the park but such is life. I’m still glad I get to do what I love! 💗
