Turmeric Leek Flaxseed Loaf

“Like a big bowl of soup in a loaf form” as described by the original recipe developer, sourdough baker & author Sarah C Owens.

Leeks are aplenty in the market and the batard is a tribute to this fragrant vegetable. Added turmeric, black pepper and flax seeds makes it a powerful bread that is impressive in both, flavour and nutrition.
Perfect for all kinds of savoury sandwiches, with a bowl of salad or soup. We particularly like sandwiches filled with curried tofu /paneer or tuna salad.

Week 5 - Sprouted Grains and Flours!
Usually considered being difficult to work into bread as they compromise with strength and texture of crumb. So , we learned with on how to , as there are multiple benefits of sprouting. As an indian/asian, we all are aware how sprouting help improve digestibility and enhance nutrition.
We made -
Sprouted Quinoa Sourdough (1st image) - it had sprouted whole wheat flour along with wholegrain wheat flour and 10% of quinoa sprout. It was interesting way the dough behaved. The hydration needs were higher than normal wholegrain flour.
3rd & 4th image - Sprouted Spelt berries loaf. This one is enriched loaf but a difficult dough to handle (atleast for me) . A delicious loaf with complex layers of flavours had -
-whole durum leaven
-sprouted spelt berries mash
- scalded oats
-scalded flax seeds
- black sesame seeds
The enzymatic activity in the dough Vs the ambient temperature in my kitchen has tested all my skills as a baker 😅. I m still wrapping my head around this one.
Lastly - fermented banana bread with sprouted whole-wheat flour. Easy to mix dough- fermented over night. The batter had fermented almost like a dosa batter. 1/4 tsp of baking soda to manage the acidity and voila a beautiful tender banana bread - mildly sweetened with coconut sugar. The dark chocolate and walnuts were good addition. We loved the texture !! My favourite sourdough banana bread so far and I have made many 😝.
