This is an ideal tray-bake when you are in a rush to organize a last minute kids get-together.

My Lemon vanilla sponge slices.

This cuts beautifully into 12 slices which is just right for portion control.
It takes less than an hour to get done and fuss free; while you attend to other household matters.
It’s soft, moist, melts in your mouth and light as a feather. The best part is, you have complete control over how much sugar goes into this cake.
Perfect in many ways… as no child complained; who doesn’t like vanilla and lemon combo.
Ofcourse if there is leftover, it goes so well with an adult cup of tea too! Yum!

Lemon lovers rejoice!
Sometimes it’s about the simple things that deliver us joy.
This moist, soft and fluffy lemon cake, a tart lemon curd filling and mild sweet creamy lemon buttercream frosting is just divine.
So if it’s the mid week blues…

This is my last task before I close my bakes for the year 2021. 💫🎄

A traditional Christmas cake absolutely must have a marzipan layer.
The sweet hint of almond is a vital part of the overall taste of the cake, marzipan also helps to trap in all the moisture in the cake.

This means on Christmas day, when you cut into that cake… it will be moist, it will be sweet and it will be Christmasy with every single mouthful! Yum!

Now usually after marzipanning the final layer of icing will go above it all. This is mainly for decorative purposes. This would be either a royal icing or a white fondant.
However since I like my cakes to be rustic and a little healthy when it comes to the sugar content I avoid this last stage.

This Christmas cake was specially made for a family which wanted it kept simple but delectable. I have ornated the cake with marzipan snow flakes.
Also in this particular marzipan, that is homemade I have cooked the egg whites keeping in mind our tropical temperature and food allergies.

It’s an absolute joy to see the end result…
I’m just thrilled to finally begin the season with a well deserved holiday with family back home!

I usually never quite get it together to make a traditional Christmas cake.
The only time I did do a proper one was in 2020, when pandemic covid life brings in the master baking instinct in you to venture into experimentation.
This particular recipe was a massive hit!

Even with my rather limited experience, my version of a classic Christmas cake is pretty much a nod to a great Christmas tradition.

I’ve made a few this season and these beauties were made over 6 weeks ago. The longer they stay the better they taste.

The many splashing and drizzling of solidifies the flavour maturity of these gorgeous preserved fruit cakes.
It’s an experience and a commitment one undertakes patiently like nurturing a baby to adulthood.

This delightfully festive cake is made of raisins, currants, sultanas, glacé cherries, orange zest, preserved orange peel, treacle, chopped almonds, mixed spice, cinnamon, cardamon, cloves, vanilla and many many splashes of good strong brandy/sherry.

It smells heavenly, looks breath taking and I guarantee; tastes simply incredible!

Tis the season to be merry after-all…🎄🌟

So, I thought given that I’ve made sooooo many of these gorgeous light, flaky, fruity Christmas mince pies… ❤️they deserve a separate post.

My mince recipe is a combination of my mother’s wedding cake recipe, yep you heard me right and Christmas mince.

Now I must say that there are so many mince recipes out there and each to his own.

This mince is boozy, fruity, with a bite to it, less sugary and mushy. No, I don’t use suet in my recipe however it’s uncompromising in taste and flavour!

I like less pastry more mince. My shortcrust has abundant of orange zest and almonds.

These homemade and handcrafted mincepies are spicy, boozy, zingy, tangy delicious fruit mix encased in light crispy pastry. Very festive! (I’ve used all possible adjectives here…😆)

And for a request I have done a different permutation of the mince, non alcoholic.
Here I substituted the alcohol with earl grey tea and cranberry juice, this gives the mince a big omph! Trust me the tea works.
With over 5kgs of mince almost gone… Christmas around the corner, you know it’s a hit!

Well, it’s almost Christmas folks!🎄
I have been on radio silence, mostly because my oven has been busy trying to get through all the yummy Christmas bakes.
As challenging as it seems right now, cautiously optimistic for a family Christmas season… with booming omicron threats on the horizon!

That said… I was fabulously intrigued and honored when tasked to whip up a grasshopper pie! 💚

A grasshopper pie is a mousse marshmallow pie with a chocolate crumb crust. This gorgeous lush, pastel, green, chilled minty pie is associated with springtime and Easter celebrations in the United States.
It’s fabulously light and refreshing yet a conversation starter for any dinner party.

Now, the adornment is the very positive feedback, from a very sound authority that it smelts and tasted perfection! Yay!!! Just thrilled.

Some days you just need lots and lots of “good” chocolate!
I call it; “eating for a good cause” 😂 and making them count!

These classic chocolate brownies, have a lovely crust on the top, a gooey fudgy center and a firm yet satisfying bottom.
There is no opulence, no excessiveness just pure joy of wanting a mouthful of gratification with your simple black expresso!

I’m one for the simplejoys in life….

HOMEMADE MINCE JARS ARE READY FOR ORDERING!!❤️

Till about an year ago I would have thought it an absolute waste of time doing a batch of mince. I’d rather use good shop-brought mince and mince pies any day!

But baking brings an irrefutable sense of satisfaction and this helps to bridge the gap between fantasy and reality…. specially in this pandemic life.

These mince jars have changed me forever! They are suet free, not wet/mushy nor are they overly dried up bits of fruit, which we do so like to hate.
Its glinting with fresh tartly fruit that’s rich, slightly boozy and smells like Christmas morning!
These are just bursting with richness, right and ready to go into my star-topped mince pies! ⭐️
Feels almost like Christmas! 🎄

CHRISTMAS BAKES are out lovely people!! ✨🎄🌟

I’m super excited… this is my first ever Christmas menu.
Usually all my bakes are for family and friends, but this time a lovely friend said I should share the joy! 💕

🎄My bakes and recipes are made with the best quality ingredients, no nasties and no preservatives. Just like “mums” home bakes.

Weekends are about keeping things simple in my kitchen.

A few desserts/pastries that are sure to impress and fairly easy to make with whatever is available on hand, is a well made Frangipane tart.
Now with frangipane, you can keep this a classic… but where’s the fun in that, right?!

I am in love with the subtle almond flavour the frangipani cream filling adds. I’ve added some tart/juicy “frozen” yes, you heard me right, frozen blackberries! (I love getting my sour fix, whichever way I can.)
I have spread a think layer of raspberry preserve on the pastry shell before adding the filling.
You can serve this with double cream or with a good dollop of clotted cream.
Now the question is… should I go with a cup of tea or a glass of wine?!

Vegans should enjoy good desserts too!
So when I was tasked to bake a vegan dessert, I was excited and thrilled to take up the challenge.

I’ve had this cake recipe with me for sometime, however never quite ventured to bake it. Well it’s “vegan” right…?!
Hence it was time to experiment in small quantities first and then I hit the correct taste buds!

This cake is made of organic coconut oil and the delectable deep dark rich ganache is made of organic coconut butter. (No not coconut cream people)
It has expresso powder, vegan dark cocoa powder, pistachios and melted vegan dark chocolate chunks! Can it get any more chocolatey than that!

The cake is deep dark, nutty and rich.
Just it’s existence is proof that vegan cakes can look and tastes fabulous!

I know… but these are little facets that delight me these days!

Happy National day Singapore!🇸🇬

This garden city knows and loves its food. With a history of immigration and a vibrant mixture of different ethnic groups… Singapore and it’s people no matter who you are or where you come from, loves their food!

In singapore you never run out of options or choices and most people will famously go to great lengths to get their favourites.

So given the hardest part of a semi lockdown is not being able to dine outdoors… I choose my poison to celebrate at home.
