Classic. That is the word used to describe the famous desserts, Cheesecake and Creme Brûlée. But The Mad Crumbs Co. is bringing back the classics with a twist! Join us in baking a Basque Burnt Cheesecake, both original and tri-layered. We will also cover both original and flavoured Creme Brûlée.

Basque Cheesecake is often called ‘burnt’ cheesecake due to its iconic rich dark surface and unlike normal cheesecakes, this does not have a crust/base. As it is baked at a high temperature, a caramelised exterior that serves as a natural crust is formed.

Creme Brûlée is also known as ‘burned cream’. It is a dessert consisting of a rich custard base topped with a layer of hardened caramelised sugar.

In this class, you will be taught and guided by our in-house baker, Joanne, the co-founder of Nothing Batter. With her guidance and expertises, you can recreate these classic desserts in the comfort of your own home and experiment on them with your desired flavours!

Italian dessert or French dessert? There is no need to choose, we can do both! The Mad Crumbs Co. is now offering this Italian-French Baking Masterclass where you get to enjoy learning and baking the classic Chocolate Éclair & Torta Caprese.

The Torta Caprese is a traditional Italian Cake made with chocolate and either almonds or walnuts. These are also known as flourless cake, which only consist of three core ingredients: egg, butter, and sugar. Simple, yet delicate and challenging at the same time. It is one of the first gluten-free cakes that have ever been produced.

Next, we have the classic Chocolate Éclair. These gems came all the way from France and it used to be called ‘Pain à la Duchesse’. They are made with choux dough filled with cream and are usually topped with icing.

Once you get the hang of making a good choux base, there are endless possibilities that you can experiment with.

You will be taught and guided by our in-house baker, K, the founder of Cakes by K. She specialises not only in cakes, but in choux pastries as well!
