Eggs is another baking ingredient that serves many functionalities.
They help in -
- keeping products moist
- crust colour
- flavour
- binding the batter well
- aeration/foaming (esp egg whites)

With chiffon cakes, the separation of egg yolk and egg white, and thereafter whipping/foaming of egg whites is often the most important step in giving its distinct light texture and volume.
How it works is that proteins in egg white begin as small furled up balls, but as they are agitated with whipping, they start to stretch out and bond with each other, forming a sort of network. At the same time, air is being introduced in the whisking motion, and becomes trapped into the network in the form of bubbles. With more whipping, the network becomes stronger and stronger and the bubbles also spread out into many many tiny bubbles, and you see your foam become stiffer and stiffer. At this point, the small air bubbles are held in its place and don’t escape (at least for awhile), giving birth to the foam. Incorporate this into the cake batter, and wheeee you get such a wonderful light texture and yums cake hehe!! 🤤.
