Flour
Flour is the foundational ingredient in most bakery products. Made by grinding wheat or other grains, it provides structure to baked goods like bread, cakes, and pastries. Different types of flour, such as all-purpose, bread flour, and cake flour, vary in protein content, affecting the texture and structure of the final product.
Sugar
Sugar adds sweetness and moisture to bakery items. It also plays a role in browning through caramelization and Maillard reactions. Granulated sugar, brown sugar, powdered sugar, and even honey or syrups can be used depending on the recipe, each imparting different flavours and textures.
Yeast
Yeast is a leavening agent used in bread-making that causes dough to rise by producing carbon dioxide. It comes in forms like active dry yeast, instant yeast, and fresh yeast. Yeast fermentation also enhances flavour and creates a light, airy structure in bread.
Eggs
Eggs provide moisture, richness, and structure to baked goods. They help bind ingredients, give cakes and pastries a tender crumb, and contribute to leavening and colour. Egg yolks add fat, while egg whites add protein for stability.
Butter
Butter adds flavour, moisture, and a tender texture to bakery products. It also contributes to the flakiness of pastries and creates rich, soft cakes and cookies. Variations like margarine or vegetable shortening may be substitutes in some recipes.
Milk
Milk is a common liquid in baking that adds moisture, richness, and flavour. It also helps to activate certain leavening agents, like baking powder and contributes to the browning of crusts. Cream, buttermilk, and plant-based milks are often used depending on the recipe.
Baking Powder & Baking Soda
These are chemical leavening agents that help the dough rise without yeast. Baking soda (sodium bicarbonate) requires an acidic ingredient to activate, while baking powder contains both an acid and a base, making it effective on its own. Cakes, muffins, and cookies create a light, fluffy texture.
Salt
Salt enhances the flavour of baked goods and balances sweetness. It also strengthens the dough in bread-making and controls yeast fermentation.
Flavorings & Additives
Vanilla Extract: Adds a rich, sweet aroma to cakes, cookies, and pastries.
Cocoa Powder: Adds deep chocolate flavour to baked goods like brownies and chocolate cakes.
Spices: Cinnamon, nutmeg, and cloves are often used to add warmth and depth of flavour to bread, cakes, and pastries.
Fruits and Nuts: Dried fruits, fresh fruits, and nuts add texture, flavour, and visual appeal to bakery items.
