🍫 🍫 Classic Chocolate Creams 🍫🍫
1️⃣ Ganache
Heat 200 ml of milk cream and mix with 200 g semi-dark chocolate and 20 g butter until smooth.
2️⃣ Creme de chocolate
In the fire 500 ml of milk, 100 g of sugar, 40 g cocoa, 40 g starch and 50 g chocolate, stirring until thickened.
3️⃣ Creme confeiteiro de chocolate
Cook 500ml of milk with 4 gems, 120g of sugar, 40g cocoa and 30g of starch until it gets a firm texture.
4️⃣ Mousse
Melt 150 g of chocolate, add 2 eggs, 30 g of sugar and 200 ml of whipped cream, keeping it light.
5️⃣ Mascarpone and chocolate cream
Mix 250g of mascarpone with 150g of melted chocolate, 200ml of whipped cream and 50g confectioner’s sugar.
