Mrs. Pilar Reyes Gonzalez [ 1933 – 2002 ], everybody’s “Tita Pilar,” was from Arayat, Pampanga, and like most Capampangan wives, was a hardworking, successful entrepreneur. Although she excelled in the Real Estate, Development, Banking, and Jewelry businesses, her Big Thing in Life was to Bake, and she defined herself as a Baker. Since marrying Augusto Beda Gonzalez in 1956, she sold her various products to her relatives and friends from her house. These were the traditional “bakery staples”: Chocolate, Mocha, Butter, Chiffon, and Flan Cakes, Brazos de Mercedes, “Ensaimadas,” Cinnamon Rolls, Brownies, “Panaritas,” Boat Tarts, etc.. In 1989, “Tita Pilar” acquired the “Dulce Vida” Cakes & Pastries which was staffed by the original bakers of the famous Spanish “Las Cibeles Pasteleria y Salon de Te.” She renamed it “Pasteleria Mallorca Inc.” and insisted that the bakers continue to use the original, expensive ingredients, follow the original techniques, maintain the high quality, and make sure the products tasted exactly like these did in the 1950s when “Las Cibeles” was at its height. She assured the continuous production of the Spanish pastry shop’s wonderful repertoire which are staples of traditional households all over the city. Today, “Pasteleria Mallorca Inc.” carries both the upscale, Spanish “Las Cibeles” product line and Tita Pilar’s traditional product line of Cakes, “Ensaimadas,” Cinnamon Rolls, Brownies, etc.. Her children continue her work by maintaining the product quality for which she always strove.
