Do you really need premium chocolate to make soft and chewy cookies?

lā€™ve tried both in my chocolate chip cookies: premium chocolate (couverture, which can cost 3-4x more, and regular chocolate (compound).

My verdict? No, you donā€™t need couverture to make a chewy cookie.

Couverture can significantly improve the cookie flavor because of its cocoa butter content. But the chewiness of the cookie itself comes primarily from your dough.

You can use the most expensive chocolate and ingredients, but if your dough recipe isnā€™t formulated for a chewy texture, expensive chocolate wonā€™t magically make it chewy.

So focus on perfecting your dough first. Then we can talk premium chocolate.

Does freezing your dough stop your cookies from spreading?

I donā€™t really freeze my cookie dough as I only chill it (24 hours minimum) for better flavor and more predictable spread. But for the first time, I tried baking them straight from the freezer.

šŸ‘‰The result: yes, the cookies retained their shape. They were chunky and crispy on the outside. But the inside was slightly raw.

ā“Why? Because the outside baked faster before the cold center had the chance to warm up.

šŸ’”The fix: If youā€™re baking dough straight from the freezer, bake them at a slightly lower temperature (about 5-10C lower than your chilled dough) and also extend your baking time by 2-3 minutes. Also rest your frozen dough in room temperature for 15 minutes before baking them.

Also note: if freezing doesnā€™t stop your cookies from spreading, check your recipe (wet-dry ingredient ratio).
