In our kitchen, the secret ingredient is always time. 🕰️✨

We start with the freshest peeled garlic from , but we rarely use it on day one. Instead, we mince it, pack it flat, and send it to the freezer.

Why we freeze our garlic:

🌿 The Flavor: The cold-rest breaks down the cell walls, mellowing out that harsh bite and leaving behind a sweeter, deeper profile. When this frozen garlic is mixed into our dough—which then undergoes its own overnight cold fermentation—the flavors compound and deepen beautifully. It is the secret behind our classic Garlic & Rosemary Focaccia!

⏱️ The Convenience: Between balancing day jobs, running the bakery, and managing a household, time is precious. One prepped Lock & Lock container lasts us 2-3 weeks. That means no daily peeling or crushing for us, and an easy, accessible flavor boost for our daily meals.

Before there was a TRD menu, there were just two siblings trying to figure out the types of food we could all enjoy safely as a household with complex and varying health concerns.

The truth is, our baking journey started in hospital waiting rooms. Between navigating lab results, managing doctor's appointments, and carrying the physical weight of chronic stress, we heeded the call to slow down. We had to re-learn how to rest and flush out stress.

That need for healing bled into our kitchen. We started spending our nights deep-diving into the science of flour and fermentation. Our goal wasn't just to bake; it was to create deeply comforting food that catered to the strict dietary needs of the seniors in our home, without sacrificing the joy of eating together.

That season of research became the foundation of The Rested Dough, giving birth to our three hero bakes:

We wanted a rich, deeply satisfying umami flavor, so we used Nutritional Yeast to give this a "cheesy" profile without a single drop of dairy. Folded with fresh scallions and topped with toasted sesame seeds, it is safe for complex diets, easy on the stomach, and incredibly delicious.

​We love cheese so it's natural that we tried to create a deep, satisfying cheesy flavor that is still completely safe for our household's complex dietary needs.

Enter: The Spring Onion & Nooch Focaccia.

I will always remember the first time I tasted focaccia. I was a wide-eyed 18-year-old with my first-ever call center salary. I remember taking that first bite and thinking, "Wow, this is like pizza, but better!" It’s been one of my favorite comfort food ever since.

When we created The Rested Dough, we knew we had to formulate a different kind of authentic bake for our own pantry. You’ll notice our focaccia has a tighter, softer crumb. That is entirely by design, inspired by the traditional, everyday flatbreads of Southern Italy.

We chose this specific style because it is exactly what our household requires. It is completely denture-friendly for our senior parents who need a yielding, tender bite, and the overnight cold-rest makes it safe and easy to digest for those of us managing complex stomach issues.

Bread can taste good, feel good, and be truly good for us. 🤍

POV: When you know it's Rested Dough pickup weekend. 📦✨

This marks our second weekend of orders since launch, and this time, we’ve upgraded our packaging! Looking through these photos, we were blown away—it wasn't just one massive table-clearing order; we had a couple of orders claiming two full slabs and 3-4 boxes of cakelets to share with your homes.

Seeing these stacks reminds us exactly why we started. The goal was simple: craft bread that was safe, anti-inflammatory, and easy on the stomach for our household. We spent weeks testing the dough, making sure the inside—the crumb, the fermentation, the ingredients—was perfectly balanced. And when it came time to finally share it with others, we wanted that same care and intention reflected in every detail of the packaging.

Our doughs take over 24 hours of resting to achieve maximum flavor and become a bake that is safe for people like us, who manage complex health issues at home. Rushing the final presentation just wouldn't feel right. That’s why every single box that leaves our kitchen is hand-tied with twine, and every care card is placed with strict intention.

It’s a bit of a Sunday reflection on life, isn't it? For months, or even a few years now, we've grown quieter as life has felt nothing but cold and hard. In hindsight, those harsh, seemingly secluded seasons led to this pleasantly surprising new chapter. It feels like we were going through our own cold-fermentation (and in many facets, we still are). But we can finally taste, see, and feel that this isolation was, in its own form, a necessary rest—one that prepared us for this beautiful new season we get to enjoy now.
