Better Than Chocolate Campfire Cupcakes
For some reasons I don't recall, Ginger Peñaflorida Palanca and I were talking about our favorite cakes on our way to lunch during one of the busy days last week. She claimed that Purple Oven's Chocolate Campfire is the best cake she had ever tasted. I agreed beyond question. Although not really the best that I have eaten, the cake gives comfort and joy as it brings back memories of childhood camping. The S'mores-y cake is the stuff delicious is made of.
Chocolate Campfire is a wonderful blob of white fluff that’s lightly torched, and inside is an ooey, gooey, moist chocolate cake. One bite of this surprisingly heavy cake is a delicious symphony of marshmallow and chocolate, reminiscent of s’mores, a favorite camping snack, minus graham crackers. So sinful, but oh so worth it.
The inspiration took my laidback weekend whole as I dediced to come up with a version that would rival the white fluff goodness and the decadence of the great cake. I used Heny Sison's Moist Chocolate Cake recipe, adjusted the quantity of the ingredients and added a little more fat to make it even moist. I surmised that I adding a chocolate cream filling will elevate my creation and I was never wrong. I got 60 cupcakes and ran out out the filling and so I used caramel fudge for some which was equally delectable.
For the frosting, it took me a while to decide which one to use and finally made Martha Stewart's recipe of marshmallow frosting. Consistency was a bit loose but remedied the setback by adding some confectioner's sugar. I was about to torch the frosting when I realized my butane refill was missing and so I decided to broil the frosting back in the oven. Making the meringue a little bit toasted elevated the cupcake's play on texture.
Topping the toasted meringue frosting with Graham cracker would be quite predictable, I thought. I used mini oreo cookies instead. I drizzled the cupcakes with some Hershey chocolate syrup and caramel fudge to make it even more sinful and sprinkled some semi-sweet chocolate chips! =)
John Andres Baltazar did the taste test and said it was better than the campfire...and so the name =)
