The reason this craft is so meaningful to me is because when I started six years ago, I was constrained. I didn't have the resources to attend master workshops, and the technical flours I needed weren't even available back then.

But the act of figuring it out anyway, despite every limitation—that is what made the journey feel so much deeper than I ever thought it could.

All this to say, I don't really mind if panettone is seen as overrated. Because for me, it's deeply personal.

It has always been a huge struggle to get the tech specs of flour from the local millers who sell them.

All of the books I've read on panettone would always talk about the W rating and P/L ratio of flour when making panettone.

I wonder if our local flour companies would ever get to a point where information is readily available for homebakers like us.
