Happy with how this one turned out (first panettone mix in the Ooni Halo)—but one good bake doesn’t mean much if I can’t repeat it.

Currently in a dry spell with my panettone: overnight proofing that used to take 10 hours to triple is now taking 16-20. It’s affected the final volume too. Hoping I figure out what shifted soon. 🥲

The reason this craft is so meaningful to me is because when I started six years ago, I was constrained. I didn't have the resources to attend master workshops, and the technical flours I needed weren't even available back then.

But the act of figuring it out anyway, despite every limitation—that is what made the journey feel so much deeper than I ever thought it could.

All this to say, I don't really mind if panettone is seen as overrated. Because for me, it's deeply personal.
