Food cost + Markup = Selling Price?
Please guys pag aralan nyo yung tamang pag kuha ng selling price.
Imagine nyo nag procure kayo ng mga ingredients sa supermarket/ palengke or minsan sa online shopping website pa.
Cake & frosting Ingredients: Cake flour, butter, eggs, baking powder, cocoa powder, sugar, vanilla extract, oil, milk, yoghurt, cream, chocolate, etc.
time: 1 hour - 2 hours + fare / shipping fee
Prep & Baking: 2 hours +++ tapos mag huhugas kapa ng pinag haluan mo ng cake batter, pans and utensils (isama mo cost dishwashing soap + water + gas/ electricity ng oven)
Prep ng Frosting: cost ng ingredients na ginamit mo sa frosting, electricity sa pag gamit ng mixer, then i chilled mo sa ref, tapos hugas ulit mga utensils.
prep ng pag gawa ng decorations: fondant, food color, skewer, cornstarch, other edible decorations, non- edible flower wires, edible glitter dust, vodka, etc.
cake assembling: cost of packaging( cake board, cake box, ribbon, sticker, candle), other packaging (disposable piping bags, wet wipes/ paper towels)
labor: ilang oras mo gagawin per cake? how much yung standard rate mo? basic hour rate ngayon is 68 to 125 per hour sa mga employee. what if skilled worker ka? with degree? with professional experience? Nag bayad ka ng trainings, seminars para matuto mag bake. Nag bayad ka ng ticket/travel para matuto sa ibang city/country. it depends sa rate na i cha- charge mo.
utilities: Rent, water, electricity, gas +++
maswerte ka kung hindi ka ng re-rent.

total ng food & packaging is P600 (20% -30%)
add mo pa utilities, labor, rent sa place mo, fee sa pag gamit ng mga kitchen equipments/ machines ( tulad ng chiller, oven, stand mixer), utensils,etc..
add P800 sa labor if 4 hours ginawa (200/hour) example na rate ng mga skilled baker.
Usually 200 to 300 per hour na charge ko.
(Usually 20- 30% )
add 15% to 20% for Overhead expenses
( Office supplies, Repair & maintenance, taxes, accounting, human resources, insurance, rent& utilities. )
Add 5 to 10% para sa depreciation (pag gamit ng kitchen mixer/chiller/ utensils)
& Janitorials (dishwashing soap, cleaning chemicals, paper towels,etc)
Wastage cost: 5 to 10%
Hindi lahat ng binake mo at ginawa mo na icing magagamit mo. Minsan merong mga tabas sa cake, sobrang icing para my extra ka on the side. Sobrang fondant na kinulayan , hindi nagamit na egg yolk, sobrang food color,etc.
as per standard rule, your food cost should be between 20% to 30% percentage of the selling price - that's based on standard calculations ng mga food establishments.
Food & packaging cost : (FC&PC -600.00)
Selling price options:
If 20% ang FC&PC - 3,000
If 25% ang FC&PC - 2,400
If 30% ang FC&PC - 2000
So pwede mo ibenta from 2,000 to 3,000 pesos.
nasa sa inyo po iyan at walang pilitan. Kung gusto mo mag bake at kumita ng kaunti kc passion mo lang or pampalipas oras, it’s okay na ibenta ng mura. Pero if your planning to focus and further grow your business, you have to consider all the other aspects.
working hard is ok, but working smart is much better, know the value of your masterpiece.😊
