Has anyone else noticed the little rainbow bubbles that sometimes appear on the surface of their cacao? 🌈✨ They absolutely put on a show for me tonight.

Tonight’s brew was Mamamuti Cacao & Vanilla Buttons, oat milk, fresh orange and lime zest, a few drops of ginger oil, a pinch of salt, a little coconut sugar… and a whole lot of joy.

From now on, I’m officially celebrating rainbow bubbles. They feel like tiny reminders to slow down and notice the magic hiding in the everyday.

Irma Intel …I’m heading off on a little road trip tomorrow, so tonight I’m making an extra-big pot of cacao to chill overnight and pour into a mason jar for the drive.

Trust me on this one… chilled cacao with citrus zest is next level. You haven’t lived until you’ve tried it.

Tonight’s brew: oat milk, plenty of Mamamuti Cacao & Vanilla Buttons (don’t judge… I like it strong šŸ˜), fresh lime and orange zest, a pinch of salt, a little coconut sugar, and a few drops of ginger essential oil.

Now all that’s left to do is turn up the 90s hip hop and dance around the kitchen.

Can we stop being so afraid of heating our cacao?

One of the biggest myths I see in the cacao world is that if your cacao gets too hot, you’ve somehow ruined it.

But heat has always been part of cacao’s story.

The beans naturally heat up during fermentation, they dry under the tropical sun, and most cacao is roasted to bring out the rich flavours and aromas we know and love.

I think the raw food movement had a big influence on the cacao industry. Somewhere along the way, cacao got swept into the conversation about keeping foods ā€œraw.ā€ But cacao naturally exceeds raw food temperatures during fermentation, long before roasting even begins.

Does heat change cacao? Of course. Like any food, some compounds are reduced and others become more available. But the idea that simmering your cacao for a lil while suddenly strips away all of its goodness simply isn’t supported by the evidence.

So if you love your cacao hot, frothy and bubbling, enjoy it.

It’s Matariki, and it feels like the perfect time to share the most-loved recipe from the Mamamuti recipe collection.

This three-ingredient cacao fudge is outrageously good. Rich, indulgent, and almost ridiculously easy to make. I have no doubt it’ll warm hearts, spark conversations, and bring a little extra joy to your Matariki celebrations this weekend.

MAMAMUTI CHOC FUDGE

INGREDIENTS
40 Pacific Pure Cacao & Vanilla Buttons
1/2 cup coconut cream
1/4 cup maple syrup

METHOD
Finely chop the Mamamuti Pacific Pure Cacao & Vanilla Buttons
Pour the coconut cream and maple syrup into a saucepan.
Heat gently until just steaming.
Pour in the Mamamuti cacao and whisk until thick and glossy.
You may need to add a touch more coconut cream if the mixture begins to separate.
Pour into a lined container and chill.
Slice into squares and enjoy!

Cacao has been part of my life since my early twenties, and over the years I’ve had a front-row seat to the evolution of the modern cacao industry.

I believe cacao is extraordinary. I believe sitting with cacao intentionally can be deeply healing, nourishing and transformative.

What I question isn’t cacao…it’s some of the stories we’ve built around it. Over the last couple of decades, the modern Western cacao ceremony movement has grown enormously.

Much of its popularity is widely credited to the late Keith Wilson, who started the ā€˜ceremonial’ movement and shared cacao with travellers in Guatemala through intentional gatherings that celebrated cacao and inspired thousands to take this sacred practice home. But, somewhere along the way, ā€œceremonial cacaoā€ became more than an experience…it became a product category and, in some circles, a qualification.

Personally, I don’t believe you should have to pay a lot of money to a cacao brand to become a ā€œcertified cacao facilitatorā€ before you’re considered qualified to share and consume this remarkable ancient food with others. I’m all for education, learning and honouring cacao’s cultural roots. But here’s what many people don’t realise: by its commonly accepted definition, ceremonial cacao is simply cacao that has been grown traditionally and processed as minimally as possible. The nibs are ground into a paste, which is also more commonly known as cacao mass or cacao liquor.

At Mamamuti, we intentionally choose not to use the term ā€œceremonialā€. We believe cacao can’t be boxed. And we want you to feel sovereign in your relationship with this remarkable food. I don’t want to tell you what you should experience every time you drink cacao. I want you to meet it with curiosity, trust your own body, and discover your own relationship with it. Because, in my experience, that’s where the real magic begins.

I made the perfect cup of cacao tonight.

Here’s what went into it:
250 ml of oat milk,
8 Mamamuti cacao & vanilla buttons (don’t dose shame me),
a pinch of salt,
a splash of maple syrup,
a whole lot of love,
and an extra sprinkling of gratitude.

Then, for the piĆØce de rĆ©sistance… three drops of ginger essential oil and a s**t ton of freshly grated orange zest.

Absolute. Bloody. Heaven.

And here’s my favourite little tip: wait for the bubbles.

The moment your cacao just starts to bubble …that’s the sexy moment. That’s when it’s ready.

In my humble experience, that’s when the flavour really comes alive. Richer, creamier, deeper… just magic.
