I have been pondering a lot over the past week about what next with FlourBro.
There's been moments where I think, running a bakery is f$%king hard work, let alone a bakery making sourdough!!!
Where each loaf is a living thing, that can have a mind of its own some days. It needs constant care and attention, and in our limited space we dont have room for proofers, our fridges are small and not really up for the mammoth task of holding vast amounts of dough, and the weather in Southland can range from one extreme to the other.
Its an actual fine art and a bloody big job managing all the loaf babies so they reach you in presentable delish form.
So yeah I have thought, am I up for shifting bakeries?
Do we just call it a day? Do I go back to teaching, where the stress of running a sourdough bakery can disappear and I can wake up not worrying if our dough has overproofed and if the doughs are walking 😅😅😅
But then after spending a bit of time out the front over the past couple of days, it has touched me again just how special this wee bakery is.
To hear how much our bread is the only bread they can eat. To see people walk in and their expression when they smell the bread. To see people get their regular loaf like its a regular weekly appointment. To watch kids carrying out a cookie with a smile that takes over their face. To amazing gifts from our customers, like crayfish, paua, and homemade relishes. The amazing team we have created that has become like family. Hearing stories shared over the counter, the hard stuff and the beautiful stuff.
To know this place has become more than just somewhere to buy bread.
Its community. Its connection. And maybe thats why this decision feels so huge.
We don’t quite know what the next chapter looks like just yet, but I do know this - what we’ve built here matters. And that’s because of each and every one of you ❤️
We are launching our PledgeMe very soon - keep an eye out on how you can Save FlourBro 💓 annnnd also.... in our next bakery - we will have really good fridges. And room for all the things to help make our process easier - and make our bread ever more nek level. And have more space to make even more magic amd other wild creative goodness - like PASTRIES (croissants!!!!) AND the most epic sammies, and soup, and toasties! And so so so much more! All the things i have dreamed FlourBro can be will finally have a space, where they can grace their prescence to the world!
Can we make this happen?✨️
Our lovely Audrey bought in some pumpkin and lentil soup for dinner. So good, especially with our soft spelt sourdough 🫶 thanks for your gift of love.
