I really love Pasta Salads; How about you?
Easy to make, very tasty and also practical as lunch on the go.
For 4 (as a side dish even for 6-8)
* 300 gr wholewheat penne (without egg)
* 2 large ripe avocados
* pinch of gray salt
* 20 ml extra virgin olive oil
* 1/2 lime (juice)
* 4 heaping teaspoons of home-made pesto sauce (you can find a tasty variant on my website www.healthypieceofcake.eu in the Lunch & Dinner Section

* 4 tablespoons edamame beans/soybeans (preferably fresh , I used canned from the pantry, during the first lock-down in May 2020, when taking this picture).
* gray salt to taste
* 250 gr cherry tomatoes halved
* 1 cucumber (rinsed and cut into wedges)
Topping:
*fresh basil leaves
*12 teaspoons of Violife's Creamy
*ground black pepper to taste
How to make
Mash the soft avocado flesh well with a fork and stir in the olive oil, salt (to taste) and optionally the pesto. If you stir in pesto, you hardly need to stir in olive oil. Drizzle generously with lime juice and stir well.
Cook the pasta, drain and immediately rinse with cold water through a colander.
Set aside for a while.
Wash and cut the tomato and cucumber.
Stir the mashed avocado paste well into the pasta. Then stir in the cucumber and tomatoes, reserving some for garnishing.
Garnish with creamy Violife and some ground black pepper and some basil leaves, tomatoes and ๐ฅ.
Easy as!
Note:
If you don't add pesto, you could stir 1/2 clove of crushed garlic & ๐ซ oil through the avocado mousse. For a vegetarian version you can replace Violife with burrata or mozzarella (with vegetarian label!)
