Do you know, if your Chin Chin feels "oily" or greasy in your mouth, it’s usually because the oil temperature dropped? The Solution: Fry in small batches. If you put too many at once, the oil cools down, and the Chin Chin starts to "drink" the fat instead of frying.
• Do you know, if your Chin Chin is too hard to even chew, you might be using too much egg white? The Solution: Use more egg yolks or a bit more butter for a "short," crumbly texture that snaps easily without breaking teeth.
• Do you know, if your Chin Chin gets soft and "soggy" the next day, you probably packaged it while it was still slightly warm? The Solution: Let it cool completely on a flat tray for at least 30–60 minutes before sealing it in a jar or bag. Even a tiny bit of trapped steam will turn the whole batch soft.
