That One-Day Surprise Order!

True story from Suzy’s Flair… 🎂✨

Late one evening around 8:47 PM, I got a DM:
“Hi Suzy, I know it’s late but can you help me?
I need a birthday cake by tomorrow morning 😭.
I totally forgot and now my little cousin will cry if she doesn’t see cake.

My heart paused for a second.
One day? No prior booking? 🧁

But then again… I’ve built Suzy’s Flair for moments like this to come through where others tap out. 💪🏽

So I asked:
“Vanilla, chocolate or red velvet? Let’s make this special.”
She chose red velvet. I set my alarm, got to work early the next morning mixing, baking, decorating and had it ready before 10AM!

The joy in her message afterward? “You’re a life saver, Suzy! She loved it! We all did!” 🥹💕

📌 Moral of the story?
Even when it’s last-minute, I’ll try my best to show up with softness, sweetness, and style.
Just don’t make it a habit o 😅

💡 Puff Puff Tip 4: Add a pinch of nutmeg.
Nutmeg is the unsung hero of puff puff.
Just a pinch and BOOM 💥... that nostalgic aroma hits different.
I sometimes add a hint of vanilla too for extra twist.

💡 Puff Puff Tip 5: Don’t overcrowd your oil!
I scream this all the time.
Never overcrowd your oil when frying anything.
I know you want to get more done in less time but darling, patience gives the best results, trust me.
The oil is the puff puff dancefloor therefore, give each one space to twirl.
Overcrowding drops the temperature and messes with the texture.
Fry in batches for the best results!

Extra: Remember to fry on medium heat to avoid burning these fluffy balls.

Let’s level up your puff puff game with some fun tips from Suzy’s baking notebook📒🎂

💡 Puff-Puff Tip 1: Don’t skip the proofing.
Flour + yeast = a powerful duo, but only if you give them time to rise and fluff up.
I cover my batter and let it proof in a warm spot for at least 30 mins.
If you want extra soft puff puff... this is the secret.🤭
🧠 Science behind it (Suzy’s Food Scientist Brain😄):
Yeast eats the sugar and releases carbon dioxide, which forms bubbles thereby yielding 'hello fluffy puff puff!'
No rush.
Let nature do its thing.

💡 Puff-Puff Tip 2: The “scoop and flick” technique.
Forget using spoons that betray you 😒… my trick? Use your hand and flick the batter in gently. Wrist control is key.
This method gives me smooth, round, golden balls every time 😍
You can also use ice-cream scoop if you do have one.
💃 Want that perfect “Suzy bounce” puff? That’s how.

💡 Puff-Puff Tip 3: Use warm water, not hot!
Too cold and the yeast sleeps.
Too hot and the yeast dies 🥴.
Use warm water (like baby’s bath) to mix your batter.
That’s the sweet spot for yeast activation as yeast is sensitive to heat🥵🔥
Conduct a temperature test by placing drops of the water on your forearm or the back of your hand.

🎂FACT: Why Is Red Velvet Cake Actually Red?

Red velvet isn’t just chocolate cake wearing red lipstick o😅
The red colour has a backstory... and no, it didn’t start with food colouring!

Here’s the sweet truth:
Back in the day, red velvet was made with natural cocoa powder, which contained compounds that reacted with acidic ingredients like vinegar.
That reaction created a slight reddish-brown tint. Not bright red, but a soft reddish tone.

🍫 The cake was softer than regular chocolate, had a finer crumb, and a “velvety” texture… hence the name: Red Velvet.

🎨 So how did it get so RED?
As time passed, people wanted the red colour to stand out more, so they started adding red food coloring and boom!
Red velvet became that striking red beauty we know today 😍
Don't think you have to add a lot of red food colour to achieve the desired hue.
A teaspoon or less does it for me.
Now it’s famous for:
✔️ Its unique color
✔️ Slight cocoa taste
✔️ Moist, soft crumb
✔️ Cream cheese frosting perfection 🤤

I just got a new weighing scale during my second year in the university because it was hard getting accurate measurements in grams using just cups.

I was excited to use my new weighing scale and I did my unboxing as I got ready to bake for a customer whose cake I was going to deliver the next day.
Little did I know that my unboxing was incomplete😄
I started measuring...

Something was off🤔
Why am I using double the amount of flour and sugar I would normally use when I measured with my cup?
I waved the thought aside, concluding that my scale wasn't and couldn't be wrong...like, it should be more accurate than just my cups 😅

I started mixing and was almost done when I looked up at my scale on the table and saw a piece of strong carton supporting the neck between the body of the scale and the measuring plate!
My eyes flew open...ahh!

The implication was double measurement of everything in order to exert the force needed to get the reading of my ingredients' quantity in gram.
I cried o.😭
I had to yank the piece of carton away and remeasure everything for another cake mix.
My roommates ate the first cake.

Measuring matters.
Baking is not vibes and guesswork 😅
Use proper measuring cups, not margarine tins or kobo eye.
It affects your texture, moisture and rise!
