IT'S NOT JUST FLOUR AND SUGAR

A baker in a group I belong to recently shared her frustration about her cake sinking in the middle.

And it reminded me of something I say over and over again:

"Baking is not just about mixing flour and sugar—there’s a lot that happens in the process"

Every step in baking plays a role in the final outcome.

One wrong move, and the cake will tell the story.

Let me paint a picture for you:

📌Too much baking powder? Your cake will rise too fast and collapse.

📌Not enough baking powder? Your cake will be dense and flat.

📌Overmixing the batter? Say hello to a tough, chewy cake.

📌Undermixing? You’ll have uneven texture with lumps of dry flour.

📌Opening the oven too early? That cake you were excited about might sink in the middle.

📌Wrong oven temperature? Too hot, and the cake burns outside but stays raw inside.

📌Too low, and it takes forever to bake and comes out heavy.

Baking is a science, and every ingredient, measurement, and step matters.

So, next time you enjoy a delicious, moist cake, remember—it’s not just flour and sugar.
