Rich Fruit Cake Recipe
Ingredients
2 cups (300 g) mixed dried fruits (raisins, currants, chopped dates, cherries, apricots, pineapple)
1 cup (225g) unsalted butter, softened
1 cup (200g packed) brown sugar
4 large eggs
2 ½ cups (300g) all-purpose flour
1 tsp baking powder
½ tsp ground cinnamon
½ tsp ground nutmeg
½ tsp ground allspice
½ tsp salt
½ cup orange juice
¼ cup dark rum or brandy (optional, for soaking)
1 tsp vanilla extract
½ cup chopped nuts (walnuts, pecans, or almonds – optional)
Instructions
1. Soak the fruits
In a bowl, mix the dried fruits and candied peel. Pour in orange juice and rum/brandy. Cover and soak for at least 2 hours (overnight is best).
2. Prepare the oven and baking pan
3. Mix dry ingredients together in a bowl, combine together flour, baking powder, salt, cinnamon, nutmeg and allspice
4. Cream butter and sugar in a large bowl, beat butter and sugar until pale and fluffy.
5. Add eggs & vanilla flavor
6. Combine everything gently add the dry ingredients into wet ingredients and Mix gently until well combined.
Fold in chopped nuts
Spoon batter into prepared pan and smooth the top.

1 cup (225 g) unsalted butter, softened
1 cup (200 g, packed) brown sugar
4 large eggs (about 200 g total, room temperature)
2 ½ cups (300 g) all-purpose flour
1 tsp (5 g) baking powder
½ tsp (2 g) ground cinnamon
½ tsp (2 g) ground nutmeg
½ tsp (2 g) ground allspice
¼ tsp (1 g) ground cloves
½ tsp (3 g) salt
½ cup (120 ml) orange juice
¼ cup (60 ml) dark rum or brandy (optional, for soaking)
1 tsp (5 ml) vanilla extract
½ cup (60 g) chopped nuts (walnuts, pecans, or almonds – optional)
Instructions
1. Soak the fruits
In a bowl, mix the dried fruits and candied peel. Pour in orange juice and rum/brandy. Cover and soak for at least 2 hours (overnight is best).
2. Prepare the oven & pan
Preheat oven to 150°C (300°F).
Grease and line a 9-inch (23 cm) round or loaf pan with parchment paper.
3. Mix dry ingredients
In a bowl, whisk together flour, baking powder, salt, cinnamon, nutmeg, allspice, and cloves.
4. Cream butter and sugar
In a large bowl, beat butter and sugar until pale and fluffy.
5. Add eggs & vanilla
Beat in eggs one at a time. Add vanilla extract.
6. Combine everything
Add the flour mixture gradually, alternating with the soaked fruits (including liquid). Mix gently until combined.
Fold in chopped nuts if using.
7. Pour the batter into prepared pan and Bake for 35-40min, or until a skewer inserted in the center comes out clean.
