Tasty β¨ fried rice π with fried chicken π π₯°
Ingredients for Fried Rice (Serves 5β6):
3 cups long grain parboiled rice
1 cup diced liver (optional) or cooked shredded chicken
1 cup diced carrots
1 cup diced green beans
1 cup sweet corn
1 cup green peas
1/2 cup diced red bell pepper (optional)
1/2 cup diced onions
3 tablespoons vegetable oil
1 tablespoon curry powder
1 teaspoon thyme
2 seasoning cubes
Salt to taste
5 cups chicken stock (from boiled chicken)
INSTRUCTIONS:
1. Parboil the Rice:
Rinse rice thoroughly and parboil until itβs about 70% done.
Drain and set aside.
2. Prepare the Chicken Stock:
Boil your chicken with onions, curry, thyme, seasoning cubes, and salt.
Once chicken is cooked, remove and reserve the stock for the rice.
3. SautΓ© Vegetables:
In a large pan or wok, heat 2 tablespoons of oil.
SautΓ© onions, then add carrots, green beans, peas, corn, and red bell pepper.
Stir-fry for 3β5 minutes. Add a pinch of curry and thyme for extra aroma.
4. Cook the Rice:
In a large pot, pour chicken stock and bring to a boil.
Add the parboiled rice, curry, seasoning cubes, and salt to taste.
Cook on medium heat until rice is soft and the stock dries up.
Mix in the sautΓ©ed vegetables and liver/chicken pieces. Stir gently.
5. Final Stir-Fry (Optional but Best for Authentic Taste):
Heat 1 tablespoon oil in a large frying pan.
Fry the rice in batches to give it that party-style fried rice aroma and taste.
π Fried Chicken
INGREDIENTS:
1 whole chicken (cut into parts)
1 teaspoon curry
1 teaspoon thyme
1/2 teaspoon garlic powder
1/2 teaspoon ginger powder
1 seasoning cube
Salt to taste
Vegetable oil (for deep frying)
INSTRUCTIONS:
1. Season Chicken:
Season chicken with curry, thyme, garlic, ginger, seasoning cube, and salt.
Marinate for at least 30 minutes (or overnight in the fridge).
2. Boil and Fry:
Boil the chicken until cooked.
Heat oil in a pan and deep-fry the chicken until golden brown and crisp.
