LET’S TALK BAY LEAF!
That tiny leaf may look ordinary, but it can make a BIG difference in your cooking!
Bay leaf is one of my little secrets for building that deep, lasting aroma and flavour in jollof rice, soups, stews and meat. I especially love using mine when boiling meat, even my meat-pie filling gets that beautiful aroma!
Beyond flavour, bay leaf contains antioxidant compounds and provides small amounts of nutrients such as vitamin A, vitamin C, calcium and iron. It’s also commonly used in cooking to add flavour without needing to add extra salt.
But please… LESS IS MORE! Too much bay leaf can overpower your food and turn that delicious jollof into concoction meal🤣
Cooking tip: Add a few leaves while cooking and remove them before serving. And please, don't chew the whole leaf, it can be tough and difficult to digest.
