Here's a classic Nigerian Chin Chin recipe — crunchy, slightly sweet, and perfect as a snack.

🧁 Ingredients

Dry Ingredients:

4 cups all-purpose flour

½ cup sugar (adjust to taste)

1 tsp baking powder

½ tsp salt

½ tsp ground nutmeg (optional but recommended for flavor)

Wet Ingredients:

½ cup butter or margarine (softened)

2 large eggs

½ cup liquid milk (or water, if you prefer)

1 tsp vanilla extract (optional)

For Frying:

Vegetable oil (enough for deep frying)

🍴 Instructions

1. Mix Dry Ingredients
In a large bowl, combine flour, sugar, baking powder, salt, and nutmeg.

2. Add Butter
Add the softened butter and mix with your fingers until the mixture becomes crumbly, like breadcrumbs.

3. Add Wet Ingredients
In a separate bowl, beat the eggs and mix in milk and vanilla. Pour into the flour mixture and knead into a smooth, non-sticky dough. (Add more flour or milk if needed to adjust consistency.)

4. Rest the Dough (Optional)
Let the dough rest for about 10–15 minutes covered with a clean towel.

5. Roll & Cut
Roll out the dough on a floured surface to about ¼ inch thickness. Cut into small squares or strips (1-inch size is typical).

6. Fry
Heat oil in a deep pan over medium heat. Fry the chin chin in batches until golden brown, stirring occasionally for even color (about 5–7 minutes per batch). Don’t overcrowd the pan.

7. Drain & Cool
Remove with a slotted spoon and drain on paper towels. Let cool completely before storing.

🎂 Red Velvet Cake Recipe

Ingredients:

For the Cake:

2 ½ cups (310g) all-purpose flour

1 ½ cups (300g) granulated sugar

1 tsp baking soda

1 tsp fine salt

1 tsp cocoa powder (unsweetened)

1 ½ cups (360ml) vegetable oil

1 cup (240ml) buttermilk, room temperature

2 large eggs, room temperature

2 tbsp (30ml) red food coloring

1 tsp white distilled vinegar

2 tsp vanilla extract

For the Cream Cheese Frosting:

16 oz (450g) cream cheese, softened

½ cup (113g) unsalted butter, softened

4 cups (480g) powdered sugar, sifted

2 tsp vanilla extract

Pinch of salt (optional)

Instructions:

1. Make the Cake:

1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2. In a large bowl, sift together flour, sugar, baking soda, salt, and cocoa powder.

3. In another bowl, whisk together oil, buttermilk, eggs, food coloring, vinegar, and vanilla extract.

4. Add the wet ingredients to the dry and mix until smooth and well combined. Don’t overmix.

5. Divide the batter evenly between the prepared pans.

6. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.

7. Let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.

1 tsp curry powder

Salt and pepper to taste

1 tbsp flour (to thicken filling)

1/2 cup water

For Egg Wash:

1 egg (beaten with a little water)
