First Truth:
Grams measure weight. Cups measure volume.
They are NOT the same thing.
That means 👉 You cannot convert grams to cups unless you know the ingredient.
Because 1 cup of flour is not the same weight as 1 cup of sugar.

How many cups is 500g of flour?
How many cups make 1kg of sugar?
If you don’t know this, your cake fit disappoint you one day o 😩
Today let me break it down clearly.

FLOUR (All-Purpose)
1 cup = 125g
2 cups = 250g
3 cups = 375g
4 cups = 500g
👉 1kg flour = 8 cups
Always spoon & level. Don’t dig your cup inside the bag!

SUGAR (Granulated)
1 cup = 200g
2 cups = 400g
3 cups = 600g
4 cups = 800g
👉 1kg sugar = 5 cups

BUTTER / MARGARINE
1 cup = 227g
2 cups = 454g
3 cups = 681g
4 cups = 908g
👉 1kg butter ≈ 4½ cups

MILK / OIL / WATER
1 cup = 240ml
2 cups = 480ml
3 cups = 720ml
4 cups = 960ml
👉 1 litre ≈ 4 cups + small extra

Professional Advice:
If you are baking for:
• Weddings
• Bulk orders
• Commercial sales
Please invest in a kitchen scale.
Cups can vary.
Scales don’t lie.

Overmixing batter happens when you stir too much after adding flour, which develops excess gluten and knocks out air bubbles. That’s why cakes turn dense, tough, or rubbery instead of light and fluffy. It’s more common in quick breads, muffins, and cakes than in cookies

Potato Samosas (Classic Veg)

Dough (For all samosas – makes ~20)
• All-purpose flour – 2 cups (250 g)
• Salt – ½ tsp
• Ajwain (carom seeds) – ½ tsp
• Oil – 4 tbsp
• Water – as needed (tight dough)

Dough Method

1️⃣ Mix flour, salt, ajwain.
2️⃣ Add oil → rub until crumbly.
3️⃣ Add water gradually → make firm dough.
4️⃣ Rest 20–30 minutes.

Tight dough = crispy shell.

Potato Filling
• Boiled potatoes – 3 medium (mashed chunky)
• Green peas – ½ cup
• Onion (optional) – ½ cup
• Ginger – 1 tsp
• Green chili – 1
• Cumin seeds – 1 tsp
• Coriander powder – 1 tsp
• Garam masala – ½ tsp
• Red chili powder – ½ tsp
• Amchur (dry mango) – ½ tsp
• Salt – to taste
• Coriander leaves

Filling Method

1️⃣ Heat oil, add cumin.
2️⃣ Add ginger & chili.
3️⃣ Add peas & spices.
4️⃣ Add potatoes.
5️⃣ Cook 3–4 min. Cool completely.

Chicken Samosas

Filling
• Minced chicken – 400 g
• Onion – 1 small (finely chopped)
• Ginger garlic paste – 1 tbsp
• Green chili – 1
• Cumin powder – 1 tsp
• Coriander powder – 1 tsp
• Garam masala – ½ tsp
• Black pepper – ½ tsp
• Salt – to taste
• Fresh coriander

Method

1️⃣ Sauté onion until light golden.
2️⃣ Add ginger garlic.
3️⃣ Add minced chicken + spices.
4️⃣ Cook until dry.
5️⃣ Cool before filling.

Filling must be dry, not watery.

1️⃣ Don’t Let Lack of Mixer Limit Your Mind.
Before mixers became common, cakes were made by hand.
What you need is:
- Proper butter consistency
- Fine sugar
- Patience
- Correct technique
Equipment helps, but skill is more important.

2️⃣ Soften Your Butter Very Well
If you're creaming manually:
✔ Butter must be soft (not melted)
✔ No cold lumps
✔ Not watery
Press it with your wooden spoon— it should dent easily.
Cold butter will frustrate you and waste your energy.

3️⃣ Use Fine Sugar
Granulated sugar that is too coarse will make creaming harder.
If possible:
Blend your sugar.
This helps it combine faster and trap air better.

4️⃣ Cream Longer Than Mixer Users
When using hands, you must cream longer.
Don’t rush because you’re tired.
Cream until:
The mixture becomes lighter
Colour changes slightly
It looks fluffy, not heavy
That “pale and fluffy” stage is your goal.

5️⃣ Use the Right Movement.
Don’t just stir.
Use a pressing and spreading motion:
Press mixture against the bowl
Turn
Repeat
That pressing motion helps incorporate air.

6️⃣ Upgrade When You Can — But Don’t Feel Small
A mixer will:
- Save time
- Save strength
- Increase speed
But not having one does NOT mean you can’t produce quality cakes.
Many successful bakers started with:
One bowl
One wooden spoon
Determination
Skill first. Equipment later.

Before you print logo.
Before you announce “CEO”.

Calm down small.

Here are 5 things that will save you stress, tears, and unnecessary debt:
1️⃣ Your kitchen is your first bakery shop.
If it’s disorganized, your business will be disorganized. Clean space. Proper storage. Good hygiene.
2️⃣ Stop trying to sell everything.
Cake. Small chops. Shawarma. Zobo. Decor.
You’re not a supermarket 😩
Start with 2–3 solid products and master them.
3️⃣ Price with sense, not pity.
Add ingredients.
Add packaging.
Add electricity.
Add your time.
Profit is not wickedness.
4️⃣ Your pictures will sell before your mouth does.
Natural light. Clean background. No dirty cake boards please 🙏🏽
5️⃣ Consistency will beat hype.
Deliver on time.
Talk politely.
Ask for reviews.
Repeat.
