Things feel calmer this morning. There are people walking dogs, and the eerie emptiness and silence of yesterday has abated somewhat. I can even hear occasional vehicles.

Still, out of an abundance of caution and in compliance with governmental guidance, I will be sticking aroind the house today -- no deliveries and thus no baking.

Knowing this would likely be the case, I didn't start the process for tomorrow's bread last night… as I mentioned in my prior post, without baking today, I'd have more dough than space.

I inow this is probably the last thing on anyone's minds, except perhaps for those with orders set for today and tomorrow, so I'll be contacting those people directly.

So...

I was in the early stages of making Monday's dough this morning when I became aware of the wall of smoke... and then where it was coming from and why.

I continued because... what else was a Bread Man going to do while the world outside was burning?

And then more kept happening, and I kept scrolling and looking and reading.

My earliest notions about the duration of... everything... seem naively optimistic now.

I am currently having a hard time imagining a Monday that has me out delivering these orders--last I heard a few hours ago, the Municipal government had called for a suspension of work activity for tomorrow and continued sheltering at home.

It seems I will more than likely be doing just that.

In all transparency, I'm not sure what that means for my Monday orders or my Tuesday orders, for that matter -- if I don't bake these Mondays in the morning, I have no room for Tuesdays to ferment... but I also don't want to bake these and then deliver day-old (or older) bread later.

I haven't got it figured out. Maybe some sleep will bring clarity.

(I'm safe, BTW, and hope you all are, too.)
I'll post again when I have something figured out, and I'll be in touch with my order-holders individually as well--I know some of you aren't on here.

Due to a series of well-nigh unprecedented events, I find myself with a spare RAND-O FOCACCIA today!

The Rand-o isn't a set thing; it's just an anything goes... in this case, we have salt, pepper, red chile flakes, oregano, red bell peppers, chopped kalamata olives, and fontina and parmesan cheeses.

Today was (almost) exclusively all about speckles here at the ol' nano-bakery.

Today's dough batches were rosemary-infused and NY deli rye (with caraway)... both quite speckled...
..and we pulled some Sunny Day sesame wheat out of the oven today (we put them in the oven first).

Well... it's 20 days into the new year, and I'm just finally getting this updated menu posted.

Biggest things to note:
All the boules you've loved? Now they can all be loaves, too (1.5x the size, baked in a rectangle tin, perfect for sandwiches)!

Oh... and all those boules and loaves? I have a brand new, manual bread slicer, so they can all be sliced, too! (it is manual, so not necessarily laser-precise, but better than sawing through with a bread knife)

I cold-launched mini-focaccias over the holidays... those are around and official now as well!

Everything else is largely the same.
As always...

I'm a tiny operation. All bread is baked to order. Due to the lengthy process required for true naturally leavened (sourdough) bread, the lead time is 2 days (order by sunday evening for bread Tuesday afternoon).

I do sometimes (esp. during high season) make extra dough, so it never hurts to ask.

I offer free delivery (on foot) to Buenos Aires, las Canoas, el Caloso, el Remance, Benito Juarez... and of course, ZONA ROMANTICA/E. ZAPATA and OLAS ALTAS areas.

Like the picture says, 1 OG original sourdough boule and 1 Garlic Dream sourdough focaccia (lots of confit garlic, oregano, crushed red pepper, blend of italian cheeses, sea salt, pepper) both up for grabs.

MINI FOCACCIAS!

These beauties are 6" (15.25cm) diameter, as fluffy as the original big guy square focaccias, and will be available in all the same flavors or with any combination of existing focaccia ingredients -- i'm personally really digging a simple rosemary and grape tomato right now (obviously with garlic).

They're pretty much available to order now, I guess, but it might be a bit before they're officially added to the menu -- you heard it here first!
$100 each, with a 10% discount when you order 5 or more.
