-i have to say for this recipe that is very easy to make and it is very tasty with only a few ingredients. The pie dough is still the same i learned to make from Helen Rennie youtube channel (the Stella Parks method) which is an amazing and easy to make. For this kind of tarte it is mandatory to use bosc pears. And the rest is just caramelize the fruit with a little butter and sugar. But because i like to mix recipes i added just a little more of sugar and used fresh chopped ginger as in Helen’s recipe and i added Anise to the caramel and just for decor the Anise. Do here it is. Voilà! Delicious and healthy!

I made this Almond and Pear Pie following two different recipes. I took the idea of first caramelize the pears like in a Pear Tart Tatine, and then after caramelized just followed the original recipe for almond pear pie. I am very surprised about this new pie dough crust recipe from Stella Parks very recommended by Helen Rennie on her youtube channel. It is exactly what they say it is: flaky, tasty. And it is easy to make. I just found that the only thing to pay attention in this dough is to try to take care of time and temperature, because this dough needs to be made really quick and let it chill on the fridge for at least one day before you use it. I also made this time some red fruits marmalade and guava jam, both with a touch of tequila and fresh rosemary. I will have to get some more basque pears because i found it really sexy to caramelize and bake fruit

I was tired to try to get the proper (and very expensive) mold for canelé, which is up to 150 dollars to get one here. It is a special mold for canelés. So my sister got me a silicon mold and i started making canelés. But something wasn’t right. No the consistence that i have tried in France once in my life. So a friend gave me molds for making Flan. And that’s where my Canelés got this beautiful shape. My very first edition has honey, green tea, and rum. Giving your personal touch to a recipe is kind of a reinvention huh?! - Ya estaba cansado de tratar de encontrar moldes apropiados, carísimos por cierto, para hacer canelés, ya que llegan a costar arriba de 3 mil pesos los susodichos moldes. Mi hermana me regaló un molde de silicón para hacer canelés, y empecé a hacerlos, pero algo no estaba bien, no la consistencia y aspecto que alguna vez probé en Francia alguna vez en la vida. Entonces una gran amistad me regala unos moldes de metal para hacer flan. Y he ahi de donde mi versión de canelé lleva ese hermoso aspecto. Esta primera edición lleva miel, té verde y ron. Darle tu toque personal a una receta es casi una reinvención no?!

2019 Banana Sésamo Bread / Panqué de Plátano con Ajonjolí •


The very first recipe that i learned from my mom is a kind of mini plantain pancakes that she use to cook for breakfast, and that took me to this kind of obsession with finding the perfect flavour balance with plantains, sugar, flour, and spices. Lately i have found that plantain and bananas have (of course) different flavour and consistency. The good thing about bananas over plantains is that bananas ripe faster. A lot of people throw a very ripe banana to the trash but actually is the perfect moment for that fruit to make banana bread because all the flavours and sugars are concentrated because of the ripe process.
I have made so many different recipes for this but accidentally (as always happens) i think i found my final recipe for this delicious bread style.

La primera receta que aprendí de mi mamá fueron las Torrejas de Plátano Macho, un tipo de mini hotcakes de plátano que solía cocinar para el desayuno, y que me llevó a este tipo de obsesión por encontrar el equilibrio perfecto de sabores con plátanos, azúcar, harina y especias. Últimamente, he encontrado que entre los plátanos y los plátanos machos hay una diferencia (por supuesto) de sabores y consistencias. Lo bueno de los plátanos comunes sobre los plátanos machos es que los primeros maduran más rápido. Mucha gente tira un plátano muy maduro a la basura, pero en realidad es este el momento perfecto para hacer panqué de plátano porque todos los sabores y azúcares se concentran debido al proceso de maduración.
He hecho muchas recetas diferentes para esto, pero accidentalmente (como siempre sucede) creo que encontré mi receta final para este delicioso estilo de pan.

Thanksgiving Pumpkin Chocolate Swirl Bread / Panqué de Calabaza con Chocolate - Not so long ago i started to appreciate the importance celebrating this day to americans. Far from knowing the deepest origins of this festivity, it is nowadays for them a day where you gather with family and friends to say thank you for everything in life with no religious meaning, which gives a much more strong value to family and friendship. Happy Thanksgiving to my american friends! / No hace mucho que comencé a apreciar la importancia que tiene para los norteamericanos celebrar este día. Lejos de conocer los más profundos orígenes de esta festividad, hoy en día para ellos es un día para reunirse con la familia y los amigos para dar gracias por todo lo que la vida nos da sin algún ícono religioso de por medio, lo cual le da un valor más grande a la familia y a la amistad.
