Every dessert begins with a blank plate.
Before choosing the ingredients, I start building the composition in my mind. I imagine movement, balance and the direction in which I want the eye to travel.
For this creation, I wanted the feeling of a wild meadow at sunrise.
The landscape was created using handmade stencils and layers of coloured powders, applied one after another to build depth, light and perspective. The flowers weren’t placed randomly. Each one was positioned individually to recreate the natural chaos that only nature can create.
The dessert itself remains clean and elegant, allowing the landscape to become part of the experience rather than just a decoration.
For me, pastry is not only about flavour.
It’s about building a complete visual story before the first spoon reaches the plate.

Vision
I’m becoming increasingly fascinated by blending pastry with visual art.
A plate shouldn’t just hold a dessert; it should create an atmosphere.
Techniques such as stencilling, airbrushing, powder work, texture layering and composition are not there to impress. They allow me to paint with ingredients instead of colours.
My goal is always the same: when someone looks at the plate, I want them to pause before they taste it.
That moment of curiosity is part of the dessert.
