I cooked a Sri Lankan Easter dinner inspired by my recent trip. My personal favourite was of course the Black Pork Curry but also included a lamb version of it, chicken curry, yellow rice and a rice puller, Baduma.
Dessert was an experiment; inspired by the Portuguese-Sri Lankan semolina Love Cake, the Easter Sugee was made with mixed spices, cinnamon, cashews and jaggery which required quite a bit of force to crack the block!

A specially curated tea-pairing of longan, dates, rock sugar and pandan with similar ingredients in the Peranakan fruitcake. So each cake comes paired with two packs of tea, each good for a pot. This year’s Chinese New Year fruitcake is taking inspiration from the Peranakan wedding tea ceremony. Unlike the Chinese wedding tea ceremony, the Peranakan one is more of a dessert consisting of boiled longan, red dates and rock sugar.

The inspired cake will consist of Vietnamese dried longan, Chinese cane sugar-winter melon, Thai ginger and Saudi dates.

The cake will be paired with a specially curated Reluctant Baker CNY Tea in collaboration with Sayang Me Tea.

When you turn leftovers and forgottens into a new year’s dessert…

Leftover nuts from the varieties of sugee and fruit cakes - almond, pistachio, walnut, pecan, pine.

Then forgotten:
- dark chocolate from a trip to Paris in June.
- 2025 marmalade from Pele and Pepe

Then orange rum made two years ago.

Throw in a good measure of mascarpone and mango.

Drizzle coconut nectar.

A generous dose of vanilla pods from a friend’s trip to Madagascar.

Voila… Trifle!

Today, the Fourth Sunday of Advent, I completed the 110th cake for the Christmas charity bake. This last cake is for our family Christmas, a Sicilian-Mandarin orange poppy seed pistachio sugee 😁
