🥕 Roasted Carrots with Rosemary & Yogurt Sauce
Ingredients (carrots):

½ kg baby carrots (or regular carrots cut into sticks)
2 tbsp olive oil
2 sprigs fresh rosemary (or 1 tsp dried)
2 garlic cloves (whole, unpeeled)
1 tsp tomato paste (optional, adds a deeper flavor)
Salt & black pepper

Instructions:

Preheat the oven to 200°C (390°F).
Toss the carrots with olive oil, rosemary, garlic, tomato paste, salt, and pepper until well coated.
Spread on a baking sheet in a single layer.
Roast for 25–30 minutes, until tender and slightly caramelized.

🍋 Yogurt Sauce

1 cup Greek yogurt (or strained yogurt)
Juice of ½ lemon
1 tsp olive oil
Salt & pepper
(Optional: a pinch of cumin, lemon zest, or fresh herbs like parsley/ mint)

Mix well and chill before serving,

Avocado Almond:
1 banana
1 avocado
1/4 cup almond nuts
1 cup milk
Ice cubes

Strawberry Walnuts:
1 banana
1 cup strawberry
1/4 cup walnuts
1 tablespoon vanilla yogurt
1 cup almond milk
Ice cubes

Mango Pistachio:
1 banana
1 mango
1/4 cup pistachio
1 cup almond milk
Ice cubes

Blueberry Cashew:
1 banana
1/2 cup blueberries
1/2 cup pineapple
1/4 cup cashews
1 cup almond milk

🥑🍅 Smashed Avocado Bruschetta 🍅🥑

Ingredients:
2 ripe avocados
1 small loaf of French bread or baguette
1 small tomato, diced
1/4 red onion, finely chopped
2 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon lemon or lime juice
Salt and pepper to taste
Fresh basil or cilantro leaves for garnish (optional)

Instructions/Directions:
Prepare the Bread:
Preheat your oven to 400°F (200°C).
Slice the French bread or baguette into 1/2-inch thick slices.
Arrange the slices on a baking sheet and brush the tops lightly with olive oil.
Toast in the preheated oven for about 5-7 minutes, or until the bread is golden and crispy. Remove from the oven and set aside.
Prepare the Avocado Mixture:
Cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl.
Add the lemon or lime juice to the avocados to prevent browning.
Mash the avocados with a fork until you reach your desired consistency (smooth or slightly chunky).
Add the minced garlic, salt, and pepper to the mashed avocados. Mix well.
Prepare the Topping:
In a separate small bowl, combine the diced tomato and finely chopped red onion. Add a pinch of salt and mix well.
Assemble the Bruschetta:
Spread a generous amount of the smashed avocado mixture onto each toasted bread slice.
Top each slice with a spoonful of the tomato and onion mixture.
Drizzle a small amount of olive oil over the top (optional).
Garnish with fresh basil or cilantro leaves if desired.
Serve:
Arrange the bruschetta on a serving platter and serve immediately.

Mango Spinach Salad

Ingredients:
Salad Dressing:
- 1/4 cup extra virgin olive oil
- 2 tablespoons Dijon mustard
- 3 tablespoons honey, divided
- Juice of 1 medium lemon, more to taste
- Freshly ground black pepper, to taste

Salad:
- 6 oz fresh baby spinach
- 1 large mango, cored, peeled, and diced
- 1 cup blueberries
- 1/2 cup walnuts
- 1/3 cup feta cheese, crumbled

Directions:
Make salad dressing:
1. In a mason jar, combine olive oil, mustard, lemon juice, and half the amount of honey. Whisk well or shake vigorously until emulsified. Adjust lemon juice to taste.

Assembly:
1. In a small bowl, toss walnuts with the remaining honey.
2. Arrange baby spinach in individual bowls. Top with mango, blueberries, honey walnuts, and feta cheese.
3. Drizzle with prepared dressing and season with freshly ground black pepper.

Prep Time: 15 minutes
