We will be introducing four fantastic coffees starting from the first week of March:
1. Pink Bourbon: A coffee with a beautiful balance of rose, Rhababer, and strawberry flavors.
2. Red Bourbon: A coffee with refreshing green plum aroma and sweetness.
3. Orange Bourbon: A coffee with rich vanilla and sweet dried orange notes.
4. Geisha Coji Nuluk: An incomparable coffee fermented with Nuluk, a Korean natural yeast, from Geisha beans. It offers a beautiful balance of vanilla, green plum, and jasmine tea flavors.
These coffees undergo our roastery‘s direct trading and quality control processes. Please look forward to an amazing coffee experience in the first week of March!

We wondered how to offer better specialty coffee or whether our small presence in the coffee market is making an impact. We began the new year with questions about whether to continue with specialty coffee.

To make a single cup of coffee, many processes are required. The most crucial step is selecting the green coffee beans because the highest-quality beans are essential for making good coffee. To select the beans, we conduct endless cupping sessions. Before cupping, we roast samples of the green beans, and this, too, involves a meticulous process to reach the best bean condition. After waiting for approximately two weeks, we proceed with cupping. Following this, we sort the green beans and study every aspect, including processing, farm origin, and pricing, while considering the farmer's perspective.

Once the green beans arrive, we establish roasting profiles for each bean. This involves taking into account various factors such as heat, temperature, airflow in the roasting machine, all while ensuring the beans are in their optimal condition. Once the roasting profile is set, we carry out the actual roasting. In our case, we roast in 3-kilogram batches while continuously monitoring the profiling. When the roasting is finally complete, we move on to packaging and degassing, which takes another 10 to 15 days. After degassing, the baristas take over. They conduct cupping sessions as well and focus on factors like water temperature, flow rate, particle size, water quality, and more to craft the perfect cup of coffee.

I've summarized it briefly, but many other individuals, including farmers, warehouse managers, transportation providers, contribute significantly to that one cup of coffee. We always strive for specialty coffee and appreciate the tremendous efforts and passion that go into making a single cup of coffee. Respect to all specialty coffee companies.

This project has taken over two years from conceptualization to our first production test units that we have been selling in Korea. We've played with various materials and manufacturing processes (bending metal into a cone shape is a lot harder than you'd think), and ultimately landed on 18-10 stainless steel with a PTFE disc (similar to Teflon) that serves as a gasket. Stainless steel is dishwasher-safe, durable, and much less fragile than ceramic or glass.

The December Dripper has been designed collaboratively in San Francisco and Seoul, and will be crafted by artisan metalworkers outside of Seoul. Because of the form and shape of the December Dripper, they will be handcrafted individually, not milled or formed automatically by a computer-controlled machine.

We believe that coffee tools are only as good as the resulting coffee brew tastes, and the December Dripper is the result of thousands of brews since we started work on it.

Most coffee products are designed by product designers with very little consultation from coffee professionals. They tend to provide a design platform for brewing coffee, but they don't really help guide you to the best flavor in the cup. Our core expertise and experience is in brewing and serving coffee to the tens of thousands of customers that have come into our cafes over the years, as well as our work with champion baristas and our fellow coffee experts around the world.

The flavor of coffee is the result of what happens when coffee is still a plant, how it's handled and processed, how it's roasted, and how it's ground and brewed. Because coffee has both desirable and undesirable flavor compounds in it, brewing a balanced and delicious cup can be a challenge. We're excited to offer you the December Dripper as a way to unlock the true potential of the whole bean coffee that you're brewing, whether that's at home, at the office, or in a cafe.

The wine yeast processing follows these steps:

1. **Fermentation**: The coffee cherries are pulped to remove the seeds, and the surrounding mucilage is placed in wine fermentation tanks. These tanks contain essential yeast and bacteria crucial for fermentation, which starts and affects the remaining pulp's color and aroma.

2. **Drying**: After the mucilage around the seeds ferments in the wine tanks, it dries and adheres to the seeds. This process results in coffee beans with rich fruit aromas and subtle wine notes.

3. **Sorting**: After fermentation, the wine yeast-processed coffee beans are sorted to remove any defective or unfit seeds, selecting only the beans that meet specific quality criteria.
