Ingredients
1 Exe mandazi flour_500gms
2 Margarine_100gms
3 Sugar_200gms
4 Warm milk_200ml
5 Eggs_ 2
6 Cinnamon powder / lemon / rosemary leaves - *

* - Cinnamon powder can be replaced with either lemon or rosemary leaves.

PROCEDURE
1 Weigh all the ingredients,pour them in a clean dry bowl.
2 Rub in the sugar,flour and the margarine and cinnamon.
3 Make a well in the center pour in the warm water,milk and whisked egg.
4 Kneed to a soft smooth dough to increase elasticity.
5 Allow the dough to relax for 10-15 minutes.
6 Roll out the dough and shape or cut to the required shape.
7 Deep fry the mandazis into a moderate hot oil.
8 Serve them cold

Baking tasty bread / buns using your PASHA oven:

Note: The only difference between bread and buns is in the portioning and shaping. For the bread, the dough is baked using a bread tin, while for the buns, the dough is baked using an open tray lined with greased paper

Ingredients:
1. Home baking flour - 260gms
2. Margarine - 50gms
3. Sugar - 20gms
4. Yeast - 1 tablespoon
5. One egg to be used for "egg-washing"

Procedure:
1. Weigh 260gms of flour
---------------------------------------------------------------------------------------
2. Put the flour into a bowl and prepare a well at the middle
---------------------------------------------------------------------------------------
3. Add the sugar and yeast
---------------------------------------------------------------------------------------
4. Add a little warm water into the well
---------------------------------------------------------------------------------------
5. Wait for five minute for the yeast, sugar and water to react
---------------------------------------------------------------------------------------
6. Add the margarine
---------------------------------------------------------------------------------------
7. Knead the mixture while adding warm water little by little until the dough becomes firm
---------------------------------------------------------------------------------------
8. Leave the dough to rest for 15 minutes and it will becomes soft
---------------------------------------------------------------------------------------
9. Divide the dough into two portions
---------------------------------------------------------------------------------------
9. Grease the baking tins well and put the dough into the tins
---------------------------------------------------------------------------------------
11. Bake using your pre-heated oven for 15 minutes. Open your oven and "egg-wash" the now raised breads to get the shinny coating

12. Bake the breads for another 25 minutes and they should be ready by now
---------------------------------------------------------------------------------------

Baking a 2kg Plain Vanilla Cake using PASHA oven;

Ingredients;

1. Baking Flour - 500gms
2. Margarine - 350gms
3. Sugar - 300gms
4. Baking Powder - 3 Teaspoons leveled
5. Eggs - 6 Pieces
6. Egg Yellow - 1/4 Teaspoon
7. Vanilla Essence - 2 bottle tops

Procedure / Creaming Method:

1. Sieve the flour
--------------------------------
2. Separate the flour into 350gms and 150gms into two separate bowls
--------------------------------
3. To the 350gms add margarine
--------------------------------
4. Cream the margarine and flour using a wooden stick (mwiko) until it white soft and fluffy
--------------------------------
5. In a separate bowl, break the eggs one by one, add the following to the eggs;
-> the sugar
-> the vanilla essence, and
-> the egg yellow
whisk together until the sugar is dissolved
--------------------------------
6. Add the egg mixture to the flour mixture little by little while adding the 150gms of flour in an alternate manner, while folding in
--------------------------------
7. Prepare a cake tin, grease the tin using margarine and dust with flour. Pour the cake mixture into the tin, level it from the top
--------------------------------
8. Bake in the pre-heated PASHA oven for 40 to 45 minutes
--------------------------------
9. Check with a knife / fork if the cake is dry or wet. If dry then the cake is ready, else if wet allow it to bake for some more time
--------------------------------
10. Remove your cake and let it cool before eating.

How to use your PASHA oven;

1. Wipe the inside of your PASHA oven using a clean damp cloth
2. Put some hot charcoal from an already lit jiko
3. Leave the oven to pre-heat for about 10 to 15 minutes
4. Now put your prepared cake batter in the oven and leave it to bake
5. Time of baking is dependent on the type of cake / pastry being made e.g.
-> Marble cake - 40 to 45 Minutes
-> Vanilla Cake - 40 to 45 Minutes
-> Black Forest - 20 to 30 Minutes
-> White Bread - 15 Minutes

6. Keep checking if your cake / pastry is done by poking with a dry knife / fork.
7. Remove the cake / pastry
8. Ensure to remove any unused charcoal from the oven and clean it before returning it to storage
