"Bonito bonito"
・Espolon blanco infused with Katsuobushi(dried bonito flakes) 35ml🐟
・Tomato acid 30ml
・yuzu pepper 1/2tsp
・egg white 15ml
・greentea honey 15ml
Garnished with an Espolon Reposado tomato jelly.
Put them into a shaker and shake it.
Double strain into a cup.
"Straw Hat" is a deceased Japanese cocktail made with tequila and tomato juice🍅.
Inspired by the concept of “After life,” I created this reviver cocktail that rejuvenates and revitalizes you when you drink it.
🟥Red represents tomato🍅
🟩Green represents green tea🍵
🤍And white represents egg🥚
The colors of the ingredients symbolize the Mexican flag🇲🇽, expressing how a forgotten classic cocktail has been reborn using Japanese ingredients.
Drawing on my background as a Japanese restaurant bartender, I devised a drink that can be enjoyed on its own or as a perfect pairing.(I'd like to promote this drink to be paired with snapper sashimi with Koji rice, ponzu sauce🐟🍊)
This cocktail with Espolon blanco, which is clear yet has a subtle smokey nuance, surprisingly complements the rich umami of bonito flakes.
For the garnish, I make a tomato jelly made from the red flesh of the tomatoes leftover from making clear tomato juice mixed with Espolon Reposado.By using parts that would normally be discarded as garnish, we bring them back to life.
In Japan, there is a traditional technique called “kintsugi,” which involves reviving broken pottery using gold powder and lacquer.The cup used in the shoot, much like the agave, has been reborn through kintsugi after once being broken.
This is a cocktail that incorporates the “After life” concept not only in the drink itself but also in the glassware and garnishes.
