Mixed Seafood with Parsley on a Toasted
Baguette - Created by Simo's Breads & Catering!

Brown Butter Mixed Seafood with Parsley On Toasted Baguette

1 bag of rainforest mixed seafoods
1 box mussels
200g butter
100ml olive oil
4 cloves garlic finely minced
1/2 red onion
Handfull parsley fresh
1 cup white Wine or red stripe
Salt & pepper
Scotch bonnet (Optional)

Use a large pan & place on high heat.

Add olive oil & Butter - let butter brown slighlty & then all seafood- add onion, garlic, salt & pepper /scotchie. Mix well. Cook for 5 mins. Add roughly chopped parsley.

Deglaze with white wine or beer. Cover & let steam for 5mins.

Toast a piece of sourdough or any bread of your preference.

Place toasted bread onto plate. Take seafood mix & place onto bread. Add some of the sauce for bread to soak up!

Yesterday was an eventful day to say the least!!! A day of many “firsts” for me! Happy Friday Everyone! As I start my 35 hour trip Home to Jamaica from Việt Nam- I sit with a silly grin thinking about the past 10 days of fun, food & adventures I had! What a trip thanks to my Sister & Her Husband! We did everything and more, Tasted literally everything we could, did a few crazy things & laughed till we cried. 😂Incredible & inspirational & All Around Perfect! A big thank you to everyone for their messages & love on my stories- It was a perfect way to document some of our shenanigans! Fancy but simple Sesame #RainforestSeafoods #Salmon & Seared Cabbage 😍, check out the recipe by Simo's Breads & Catering.

Sesame Salmon on Charred Cabbage

4 Salmon Fillets
1 large head of cabbage
50ml Sesame Seed Oil
50ml Soja sauce
Salt to taste

1. Sear off cabbage steak in a very hot pan until it chars.

2. Add 1/2 of the sesame oil & keep heat high. Turn cabbage. Use soya sauce to de-glaze. Process will take about 7 mins total.

3. When done, place into plate & start with salmon.

4. Season Salmon with a little salt & half of the sesame oil.

5. Sear skin side down in a non stick pan until crispy - about 2 mins. Flip & sear another 2 mins.

6. Place salmon on top of cabbage & add micro greens & some maldon salt.

#RainforestSeafoods recipe you can try courtesy of Simo's Breads & Catering – Pepper Shrimp with Corn & Potatoes!

INGREDIENTS

1 lb of raw head on Rainforest Seafoods shrimp
6 Corn on the cobb
1lb Sweet or Irish Potato
3 large scotch bonnet peppers
1 large red onion
5 cloves of garlic
2 teaspoon himalayan pink salt (to taste)
1/2tsp of black pepper
1 tablespoon smoked paprika
1/4tsp of allspice
1/2tbsp of thyme
4 limes
1 can coconut milk
1 tablespoon of old bay seasoning
2 tablespoons coconut oil

INSTRUCTIONS

1. Use a toothpick to tease out the intestinal tract from the tail end of the shrimp and discard & remove the antennae and legs if you wish.

2. Blend & then rub all the ingredients into the shrimp & corn and leave to marinate overnight or Minimum 4hrs.

3. Slice or use small potatoes. Par boil in salted water.

4. Preheat your pot with 1-2tbsp of coconut oil on medium to high heat.

5. Add the shrimp into the pot and stir for about 2 minutes to give some colour to the shrimp.

6. Add 1 can coconut milk & corn then cover with a lid and leave to gently simmer for approximately 15mins. Add potato.

7. Once ready serve immediately! Or wait until the next day - it gets better!!

En Papillote - a method of cooking in which the food is put into a folded pouch or parcel and then baked.
Now with that out of the way, this weekend you can try this #RainforestSeafoods Basa (Whitefish) En Papillote recipe by @simosbreadandcatering!

Basa en Papillote
Ingredients:
4 x fillets of basa
Sea salt and freshly ground black pepper or Simo’s Scotch Bonnet Salt
1 small lime, quartered, to serve

For the salsa:
12 cherry tomatoes, quartered
Small bag callaloo
4 spring onions, trimmed and chopped
2 cloves of garlic, peeled and chopped
1 tsp chopped scotch bonnet (OPTIONAL If you like it spicy!)
3 tbsp extra virgin olive oil
1 tbsp lemon juice
Good pinch of salt
4 x 10g butter block
Freshly ground black pepper

Method:
Preheat the oven to 350 F

Cut four sheets of greaseproof paper big enough to fold over the fish to make a parcel.

Combine all the ingredients for the salsa then divide it evenly underneath each fillet. Add the salt & pepper seasoned fish & the 10gram butter piece on top.

Seal up the parcels, place on a baking sheet and cook in the oven for about 15 minutes until the fish is just cooked through.

Drizzle the juice of a lime quarter over each fish just before serving.

Serve with some boiled potatoes and a green salad (Optional)!
